1 cup rice flour or all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup 2 percent milk
1 head cauliflower, cut into bite-size pieces
Nonstick cooking spray, for the baking sheet
1/3 cup low-sodium soy sauce
2 tablespoons honey
2 tablespoons toasted sesame oil
2 tablespoons rice wine vinegar or apple cider vinegar
1 tablespoon cornstarch
1 tablespoon sesame seeds, plus more for garnish
2 teaspoons grated fresh ginger
1 teaspoon sriracha
3 cloves garlic, minced
Sliced scallions, for garnish

Steps:

  • For the cauliflower: Place a baking sheet in the oven and preheat to 425 degrees F. (If your cauliflower is large, preheat 2 baking sheets.)
  • Whisk the flour together with the garlic powder, onion powder, salt and pepper in a large bowl. Whisk in the milk and 1/4 cup water until smooth. Toss the cauliflower in the mixture until evenly coated. Remove the baking sheet from the oven and spray with nonstick cooking spray. Spoon the cauliflower into the baking sheet, leaving any excess sauce behind in the bowl. (Do not overcrowd the baking sheet or the cauliflower will steam and not become crispy; you may need to bake in batches or use two baking sheets.) Bake the cauliflower for 20 minutes.
  • For the sesame sauce: Meanwhile, put the soy, honey, sesame oil, vinegar, cornstarch, sesame seeds, ginger, sriracha, garlic and 1/2 cup water in a medium saucepan over medium heat. Whisk together thoroughly. Bring to a boil, then reduce the temperature to medium-low and let simmer, stirring frequently, until the sauce becomes glossy and thick, about 2 minutes. Remove the cauliflower from the oven and toss with half of the sesame sauce. Return the cauliflower to the oven until dark and glossy, 5 to 8 minutes. Remove to a serving bowl and drizzle with more sauce. Add sesame seeds and scallions over the top and serve immediately.

1 head cauliflower
1 chicken breast, diced
1 cup peas
1 cup carrot
2 tablespoons soy sauce
2 teaspoons black pepper
3 eggs, beaten
2 tablespoons sesame seed

Steps:

  • Remove all leaves and cut the cauliflower into small florets.
  • Place the florets in a food processor and blend until they are a rice-like texture. Be careful not to over process or it may turn mushy. Set aside, and drain excess moisture with a towel, if desired.
  • In a large saucepan over medium-high heat, cook the chicken until no pink is showing.
  • Add the peas, carrots, soy sauce, and black pepper.
  • Stir until most of the liquid has reduced, then add the cauliflower rice. Cook for about 3-4 minutes until the vegetables and chicken are incorporated evenly into the cauliflower.
  • Spread the rice towards the edge of the pan, creating a well in the center.
  • Pour the beaten eggs into the well, stirring only the eggs until they are cooked.
  • Fold the eggs into the rice, then mix in the sesame seeds.

Steps:

  • Add the chopped cauliflower and toss to coat. Make sure there's a thin layer of batter over the cauliflower.
  • Deep fry cauliflower until golden brown, remove and drain excess oil.
  • Make the spicy sesame sauce by combining the sesame oil, garlic, soy sauce, rice vinegar, sugar and sriracha.
  • Bring the sauce to a boil then add the cornstarch slurry. Mix in and let the sauce thicken.
  • Add the fried cauliflower and toss to coat in sauce.
  • Garnish with sesame seeds and chopped scallions. Serve with rice.

1/4 cup extra-virgin olive oil
2 teaspoons salt
1 teaspoon ground coriander
1 teaspoon dried oregano
Freshly ground black pepper to taste
2 tablespoons tahini
1 tablespoon white miso
2 teaspoons red wine vinegar
1 1/2 tablespoons water
3 tablespoons toasted white sesame seeds

Steps:

  • Preheat the oven to 450°F.
  • In a large mixing bowl, combine the cauliflower, oil, salt, coriander, oregano, and pepper and toss well to evenly coat the cauliflower with the oil and spices. Transfer to a sheet pan and arrange in an even layer, making spaces between the pieces as much as possible. Roast the cauliflower in the oven for 20 minutes, turning the tray and lightly tossing the pieces halfway through.
  • While the cauliflower roasts, combine the tahini, miso, vinegar, and 1 1/2 tablespoons water in a small mixing bowl, and whisk until smooth.

1/4 cup island teriyaki sauce

1/2 teaspoon rice vinegar
1/2 teaspoon Sriracha chili sauce
Optional: thinly sliced green onions, grated orange zest and sesame seeds

Steps:

  • Preheat oven to 400°. In a shallow bowl, combine the first 6 ingredients. For batter, in a large bowl, mix flour, adobo seasoning, garlic powder, salt and pepper; whisk in beer until smooth. Dip cauliflower in batter, then in bread crumb mixture. Place on a greased baking sheet. Drizzle with peanut oil; gently toss to coat. 1 orange

2 tablespoons rice vinegar
2 tablespoons ketchup

Steps:

  • Whisk water, cornstarch, flour, salt, and pepper together in a large bowl until smooth.

1 cup heavy cream
1 tablespoon unsalted butter
1 cup olive oil

For the couscous:
2 cups chicken stock or low-sodium chicken broth
1 cup couscous
1 green apple, peeled, cored, and diced
1 tablespoon black sesame seeds, toasted
For the scallops:
1/2 cup fine sea salt
1/4 cup Madras curry powder
1 tablespoon olive oil
12 sea scallops (about 1 pound)
3 limes, cut into wedges
1/2 cup purchased wakame seaweed (optional)

Steps:

  • Make the purple cauliflower purée:
  • In a large saucepan over moderate heat, combine the purple cauliflower, cream, and butter and slowly bring to a simmer. Continue to simmer until the cauliflower is soft. Transfer the cauliflower to a food processor or blender, reserving the cooking liquid, and process, adding the cooking liquid as necessary, until completely smooth. Discard any leftover cooking liquid. With the food processor or blender on low, slowly drizzle in the oil, blending until smooth. Season with salt and keep warm.
  • Make the yellow cauliflower purée:
  • In a large saucepan over moderate heat, combine the yellow cauliflower, cream, and butter and slowly bring to a simmer. Continue to simmer until the cauliflower is soft. Transfer the cauliflower to a food processor or blender, reserving the cooking liquid, and process, adding the cooking liquid as necessary, until completely smooth. Discard any leftover cooking liquid. With the food processor or blender on low, slowly drizzle in the oil, blending until smooth. Season with salt and keep warm.
  • Make the couscous:
  • In a medium saucepan, bring the chicken stock to a boil. Remove from the heat then add the couscous, stir, cover, and let sit for 5 minutes. Using a fork, fluff the couscous then fold in the apple and sesame seeds. Cover and keep warm.
  • Cook the scallops:
  • In a small bowl, stir together the salt and curry powder.
  • In a large skillet over moderately high heat, warm the oil until hot but not smoking. Sear the scallops, flipping once, until deep golden brown on both sides and just cooked through, about 2 minutes per side. Cut each scallop in half horizontally and season with the curry salt.
  • To serve:
  • Divide the purple and yellow cauliflower purées among 4 plates. Arrange a scoop of couscous on 1 side of each plate. Arrange 6 scallops halves on the other side of each plate. Garnish with the lime wedges and wakame seaweed, if desired.

4 cups vegetable oil for frying, or as needed

Steps:

  • Combine tempura mix and water in a bowl; whisk until blended. Set bowl into a larger bowl filled with ice cubes to keep cold.
  • Mix hoisin sauce, 2 tablespoons sesame oil, vinegar, soy sauce, sesame seeds, and garlic powder together in a small bowl.
  • Dip cauliflower into the tempura batter and set on a plate to let excess batter drip off.

1 teaspoon olive oil
1 cup sweet corn
¼ cup sesame seeds

1 teaspoon cumin seed
2 medium onions, chopped
1/8 teaspoon turmeric
salt
4 dried red chilies, halved
1 -2 teaspoon sesame seeds
1 garlic clove, grated
2 1/2 cm gingerroot, grated
1 medium cauliflower, cut into florets
2 green chilies
1 tablespoon fresh coriander, chopped

Steps:

  • Heat oil until smoking, add cumin and allow to crackle.
  • Add onions, turmeric and a pinch of salt then stir continuously until the onions turn a pale golden brown.
  • Add dried red chillies, sesame seeds, garlic and half the ginger.

How to make ActiFried Orange Sesame Cauliflower

2/3 cup water
1/3 cup cornstarch
1/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 medium head cauliflower, cut into florets
2 ActiFry spoons vegetable oil
1 orange
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons ketchup
2 tablespoons brown sugar
1 tablespoon toasted sesame oil
2 cloves garlic, minced
1 teaspoon cornstarch
Sliced green onion
Toasted sesame seeds

Steps:

  • Whisk water, cornstarch, flour, salt, and pepper together in a large bowl until smooth. Add cauliflower florets and stir until coated. Transfer cauliflower to a parchment paper-lined baking sheet. Chill for 30 minutes. Put cauliflower in your ActiFry. Drizzle with vegetable oil and cook for 22 minutes or until browned and tender. Meanwhile, zest orange, measure 1 teaspoon and set aside. Juice orange to measure 1/4 cup. Combine orange juice, soy sauce, rice vinegar, ketchup, brown sugar, sesame oil, and garlic in a saucepan; bring to a simmer over medium heat. Stir cornstarch with 1 teaspoon water until dissolved. Whisk into the sauce and cook for 2 minutes, or until glossy. Remove from heat and stir in orange zest. Toss cauliflower with warm sauce and garnish with green onion and sesame seeds. Serve immediately.

FOR THE CAULIFLOWER
1 head cauliflower broken into florets
1 c cake flour
1 tsp salt
3/4 c cold club soda
FOR THE SAUCE
1/2 c soy sauce
1/2 c dark brown sugar
1 tsp sesame oil
1 Tbsp tomato paste
2 Tbsp lime juice
4 clove garlic minced
1 Tbsp grated ginger
1/2 c chicken or vegetable broth
2 Tbsp cornstarch
3 Tbsp water
black sesame seed and green onions for garnish

Steps:

  • 1. Preheat oven at 425 degrees. Whisk the cake flour, salt and club soda together. If it is too thick add a little more soda and if its too thin add more flour. Dredge the cauliflower florets in the batter. Place on a parchment lined baking sheet. Bake about 30 minutes flipping half way through.
  • 2. For the sauce. Place all ingredients up to the cornstarch in a saucepan. Bring to a boil. Mix the cornstarch and water together whisk it into the sauce to thicken it.
  • 3. Remove the cauliflower from oven and place in a bowl. Pour the sauce over and gently mix. Served garnished with black sesame seeds and green onions

1 medium head cauliflower
3 tablespoons oil, I like peanut
1 teaspoon salt
3/4 cup chicken stock or 3/4 cup water
2 -3 scallions
1 teaspoon sesame oil

Steps:

  • Separate the cauliflower into flowerets, trimming overly long stems. Leave the smaller ones intact; cut the larger ones in half so they're all about the same size. Rinse and drain. (But do not dry -- you want some moisture on the cauliflower.).
  • Heat a wok or large skillet over high heat until hot; turn heat to medium. Add the oil, swirl and heat for about 15 seconds.
  • Add the flowerets; stir quickly to coat them with oil, then sprinkle in the salt and stir briefly.
  • Add the stock, making sure all of the stems are down in the liquid. When it boils, cover and simmer vigorously for 5 to 10 minutes (depending on the size of your flowerets) until tender.
  • In the meantime, slice the scallions thinly.
  • Uncover the cauliflower, turn heat high and stir gently but rapidly until there is just a little foaming liquid in the skillet. Toss in the scallions; add the teaspoon of sesame oil. Stir gently to distribute scallions and sesame oil throughout.
