SPINACH STEAK AND MUSHROOM SALAD



Spinach Steak and Mushroom Salad image

A lighter version of a steak dinner. I made this with sirloin marinated in the Barefoot Contessa's barbeque sauce but salt and pepper is fine if you like your flavours simple. Please note the standing time is included in the cooking time.

1 lb grilling strips beef loin steak, 1-inch thick
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons vegetable oil
2 cups mushrooms, halved
1 garlic clove, minced
1 teaspoon dried thyme
1 (6 ounce) bag Baby Spinach
1/2 cup red onion, thinly sliced
1/4 cup light mayonnaise
2 tablespoons milk
2 tablespoons prepared horseradish
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • To make the dressing: In a bowl, whisk together all the ingredients.
  • To make the salad: Season the steak with half each of the salt and pepper.
  • Place on a greased grill over medium-high heat.
  • Close the lid and grill, turning once, until medium-rare, about 8 minutes.
  • Transfer to a cutting board and tent with foil.
  • Let stand for 10 minutes.
  • Thinly slice across the grain.
  • Meanwhile, in a large skillet, heat the oil over medium-high heat.
  • Saute the mushrooms, garlic, thyme and remaining salt and pepper until no liquid remains and the mushrooms are golden, about 5 minutes.
  • Divide the spinach between four plates.
  • Divide the mushrooms, steak and onion over the top.
  • Drizzle with the dressing.

Sauteed mushrooms and warm steak served on a bed of fresh spinach and parsley. It's a salad that's both hearty and fresh and takes about 30 minutes from start to finish.

4 teaspoons olive oil, divided
8 ounces cremini mushrooms, quartered
1/2 teaspoon kosher salt
1 (6-oz) sirloin steak, seasoned with salt and pepper
2 teaspoons balsamic vinegar
1 teaspoon Dijon mustard
1 large clove of garlic, minced
2 pinches kosher salt
1 pinch black pepper
2 tablespoons olive oil
4 cups chopped fresh spinach
1/4 cup chopped fresh parsley
1/4 cup thinly sliced red onion
1/4 cup crumbled feta cheese

Steps:

  • Heat two teaspoons of olive oil in a 10-inch skillet over medium heat. Add the mushrooms and salt and stir to coat them in the oil. Cook the mushrooms, stirring occasionally for 8 to 10 minutes or until the mushrooms have released their moisture and are golden brown. Transfer the mushrooms to a clean plate.
  • In the same pan, you used to cook the mushrooms add two teaspoons of olive oil. Turn the heat to medium-high and, once the pan is hot, place the steak in the pan. Cook the steak for three to four minutes on one side before flipping it over and cooking it for another few minutes on the other side or until it's cooked to your desired doneness. Transfer the steak to a cutting board or plate to rest.
  • Combine the balsamic, mustard, garlic, salt, and paper in a large bowl. Add the olive oil and whisk until it's combined with the other ingredients. Add the spinach, parsley, and onion and gently toss them with the dressing.
  • Divide the salad between two plates. Thinly slice the steak and place it on the greens. Top with the mushrooms and feta cheese.

4 flour tortillas (6-inch)
1 cup shredded Manchego cheese (4 ounces)
Reserved 2 cups mushrooms and steak, thinly sliced against the grain, from Seared Steak with Roasted Mushrooms and Spinach Salad
1 package (10 ounces) frozen corn kernels, thawed and patted dry
4 scallions, thinly sliced
Coarse salt and ground pepper
1/2 cup reduced-fat sour cream
1/4 cup chopped cilantro, plus more for garnish
2 tablespoons fresh lime juice, plus lime wedges for garnish

Steps:

  • Preheat oven to 475 degrees. Line a large rimmed baking sheet with aluminum foil. Place tortillas on sheet (it's fine if they overlap); sprinkle with cheese. Bake until edges are golden, 4 to 6 minutes.
  • Meanwhile, in a large bowl, toss together steak, mushrooms, corn, and scallions; season with salt and pepper. Top tortillas with steak mixture. Bake until warmed through, 6 to 8 minutes.
  • Meanwhile, in a small bowl, stir together sour cream, cilantro, and lime juice; season with salt and pepper. Serve tostadas topped with cilantro sour cream and garnished with cilantro and lime wedges.

2 10-ounce rib-eye steaks
2 teaspoons coarsely ground pepper
2 tablespoons vegetable oil
3 tablespoons chilled unsalted butter
6 ounces fresh shiitake mushrooms, stemmed, cut into 1/2-inch pieces
1 shallot, thinly sliced
3/4 cup Merlot
1 tablespoon chopped fresh thyme

Steps:

  • Sprinkle steaks on both sides with salt and 2 teaspoons pepper; press to adhere. Heat oil in heavy medium skillet over medium-high heat. Add steaks; cook to desired doneness, about 3 minutes per side for medium. Transfer steaks to 2 plates (do not clean skillet). Add 1 tablespoon butter to pan. Add mushrooms and shallot; sauté 2 minutes. Add wine and thyme and boil until wine is reduced by half, about 2 minutes. Remove from heat. Whisk in 2 tablespoons butter, 1 tablespoon at a time. Season sauce with salt and pepper. Pour over steaks.

1/2 cup white balsamic vinegar
2 teaspoons sugar
Kosher salt and freshly ground pepper
1 small red onion, thinly sliced into rounds (1 cup)
2 pounds spinach (from 3 large bunches), tough stems removed, thoroughly washed and drained
1/2 cup extra-virgin olive oil
1 pound shiitake mushrooms, stemmed and halved, or sliced if large
1/4 cup sesame seeds, toasted

Steps:

  • In a saucepan, bring vinegar, sugar, and 1 teaspoon salt to a simmer. Remove from heat; stir in onion. Let cool completely. If desired, refrigerate in an airtight container up to 1 week. Drain, reserving onion and 1/3 cup liquid.
  • Place spinach in a large bowl. In a large straight-sided skillet or shallow pot, heat 1/4 cup oil over medium-high. Add mushrooms, season with salt and pepper, and cook, stirring occasionally, until tender and golden brown in places, about 15 minutes. Add about one-quarter of spinach and cook just until collapsed, about 1 minute. Immediately spoon mushroom mixture over spinach in bowl; add reserved pickled onion and pickling liquid, remaining 1/4 cup oil, and sesame seeds. Toss to evenly coat. Season with salt and pepper; serve.
