One of my favorite memories of going to a restaurant when I was growing up was getting to order a Shrimp Louie or Crab Louie from someplace like the Reuben E. Lee. It wasn't until later in life that I discovered the joy of a well-crafted Reuben sandwich (no relation to the restaurant mentioned earlier), which later in life became one of our highest-rated sandwiches in our deli. This Louie dressing will make either of these better than simple Thousand Island or Russian.

1 cup mayonnaise (Use a good variety, not a diet substitute. Deli Mayonnaise (Recipe With Tutorial) is best.)
2 tablespoons chili sauce (the red "cocktail sauce" type such as Homade or Heinz)
2 tablespoons sweet chili sauce (We prefer Caravelle)
1 lemon, juice of
1/2 teaspoon seasoning salt
1/2 teaspoon sugar
1/2 teaspoon onion powder
salt & pepper, to taste

Steps:

  • In a non-reactive bowl, mix mayo, red chile sauce, sweet chile sauce, seasoned salt, sugar, onion granules, and half the lemon juice.
  • Chill and allow to rest for 15 minutes. Taste and adjust with salt, pepper, and remaining lemon juice.

4 English muffins, split and toasted
3 tablespoons butter, melted
1 can (6 ounces) lump crabmeat, drained
1 can (6 ounces) small shrimp, rinsed and drained
1 cup shredded cheddar cheese, divided
1/2 cup chopped celery
1/2 cup chopped ripe olives
1 tablespoon minced fresh parsley
1/4 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Brush English muffins with butter; set aside. In a bowl, combine the crab, shrimp, 3/4 cup cheese, celery, olives and parsley. Combine the mayonnaise, lemon juice, mustard and Worcestershire sauce; pour over seafood mixture and toss to coat. , Place a rounded 1/4 cupful of the mixture on each muffin half; sprinkle with remaining cheese. Place on a baking sheet. Broil 4-6 in. from the heat for 3-4 minutes or until heated through and cheese is melted. Serve immediately.

I was experimenting in my kitchen, wanting to come up with something light, taste and refreshing to pack as part of our "tailgating fare" for this year's Jimmy Buffett concert. I am quite proud of the end result, VERY tasty with just the right among of *zing*, but not as to overpower the sandwich. And all 24 sandwiches were gone in under an hour. :) ***NOTE, cooking time include chill time in the fridge***

1 lb imitation crabmeat
1 (6 ounce) can baby shrimp, drained
1 cup mayonnaise (more or less, to taste)
2 teaspoons dried dill weed
4 scallions, thinly sliced
2 stalks celery, thinly sliced
2 teaspoons prepared horseradish
salt & pepper, to taste
8 buns (the softer the better) or 8 croissants (the softer the better)

Steps:

  • In a medium-large sized bowl, roughly break up the crabmeat into small pieces (but not TOO small -- don't "pulverize" it, LOL).
  • Add shrimp, scallions and celery and toss gently.
  • Add mayo, dill, horseradish, salt and pepper.
  • Mix well, but gently, and chill at least 3-4 hours, or overnight.
  • Serve on soft, flakey rolls/bread/buns/croissants and ENJOY!

1 package chunk imitation crab
½ bag cooked shrimp (small shrimp or chopped large)
1 cup mayo
1 tbsp. mustard
2 stalks celery (chopped)

1/1 tsp old bay spice
1/8 tsp cayenne pepper
Salt and pepper to taste
Chipotle Mayo (Optional)

Steps:

  • Chop imitation crab and small shrimp into bite-size pieces. Then add in the diced celery, bell pepper, and red onion into a bowl. Set aside.
  • In a separate bowl, combined mayo, mustard, old bay spice, cayenne pepper, crushed red pepper, salt, and pepper. Mix wet ingredients until combined. Next, add all other ingredients mix until well coated. Refrigerate for 2 hours before serving.
  • When ready to serve to apply the chipotle mayo to the outside of the split-top bun. Toast on both sides. Once the seafood mixture is cool fill the buns so they are heaping and enjoy.

3/4 c dairy sour cream
1/2 c chopped celery
1/4 c mayonnaise
1 Tbsp fresh chopped chives

12 oz thawed and well drained crabmeat
4 medium hard rolls, slit across middle
lettuce leaves
