SCOTCH SHORTBREAD (COOKIES)

This is an old recipe from the American Woman's Cookbook, originally published in 1938. It was my dad's favorite cookie. Time includes chilling time.

Number Of Ingredients 3

1 cup butter, softened
3/4 cup brown sugar
2 1/4 cups cake flour, sifted

Steps:

  • Beat butter and brown sugar together until light and fluffy.
  • Mix in flour.
  • Wrap dough and chill for about 1 hour, or until firm enough to roll out.
  • Preheat oven to 325°.
  • Roll dough out on lightly floured board.
  • Cut out cookies.
  • Place on ungreased baking sheets.
  • Bake for about 20 minutes, or until lightly browned at edges.

UNCLE BILL'S SCOTCH SHORTBREAD COOKIES

I have been making these cookies for over 50 years. The recipe was given to me by my Nana who came to Canada from England just after the First World War.

Number Of Ingredients 6

8 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 cups butter, softened
2 cups granulated sugar
1 teaspoon almond extract

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, sift flour with baking powder and salt.
  • In a separate mixing bowl, mix together butter, sugar and almond extract; beat until very light and fluffy.
  • Combine butter mixture with flour and mix by hand until dough is very smooth.
  • If dough is too hard to handle, refrigerate for about 1/2 hour to chill.
  • Form dough into 1 inch balls.
  • Place dough balls on ungreased cookie sheets.
  • Flatten to desired thickness, about 1/4 inch thick using the bottom of a drinking glass preferably with a pattern on the bottom.
  • Bake in preheated 350 F oven for 20 minutes or until light golden brown.
  • DO NOT OVERBAKE.
  • Store cookies in a container with lid.

3/4 cup sifted flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
2 1/2 cups quick-cooking oats
1 cup raisins
2/3 cup melted shortening
1 egg, beaten
3/4 cup molasses
1 tablespoon milk

Steps:

  • Sift together dry ingredients.
  • Combine oats and rasins,sift flour mixture over top.
  • Combine remaning ingredients in bowl.
  • Pour over dry ingredients,mix well.
  • Drop by teaspoonfuls 2-3 inches apart onto greased baking sheet.
  • Bake at 350 for 8-12 minutes.

1 1/4 cups firmly packed brown sugar
1/2 cup butter
2 eggs
1/4 cup milk
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1 1/2 cups chopped apples
1 cup chopped walnuts
1 cup seedless raisin
1 (6 ounce) package butterscotch chips

Steps:

  • Cream together softened butter with brown sugar.
  • Add eggs and milk; beat well.
  • Mix and sift flour, baking powder, salt and spices; stir into creamed mixture.
  • Stir in apples, walnuts, raisins and butterscotch pieces.
  • Drop by tablespoons on well-greased cookie sheet.
  • Bake at 400 degrees for 10 - 12 minutes.
  • Remove from baking sheets immediately, cool on racks.

SCOTCH OAT COOKIES

These cookies are absolutely delicious. One of the ladies in our Bible Study group brought these and she was surrounded by ladies who wanted her recipe. She advises to use all the flour in the cookies and add extra for rolling. Put in fridge 1 hr. before rolling for easier handling.

3/4 cup brown sugar
1 1/2 cups unbleached flour (or all purpose)
2 cups rolled oats

1/4 cup boiling water
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Cream butter, sugar and vanilla.
  • Add dry ingredients.
  • Dissolve soda in boilig water and add to mixture.

Roll out on a floures surface until 1/2 to 1/3 inch thick 6. Cut in small circles about 1 1/2 inch. 7. Place on cookie sheet 8. Poke with fork. 9. ¼ cup wheat bran
¼ teaspoon salt
½ teaspoon baking powder

1 egg
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 425 degrees F (212 degrees C). Grease a cookie sheet.
  • In a medium bowl, stir together the oat flour, bran, salt, baking powder, cream of tartar, cinnamon and sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg, milk and vanilla until mixture is well blended.
  • Drop by heaping tablespoonfuls onto the prepared cookie sheet. Bake for 12 to 15 minutes in the preheated oven, cookies should be lightly browned.
