As I grew up this was my favorite meal on the school lunch menu. As my kids grew and their meal menus changed I made this at home so they could enjoy a piece of my growing up. These can be made in the oven or done on a grill. make them many and put them on crackers as an appetizer. This recipe is over 40 years old. I ate them...

1 1/2 lb ground beef
1 can(s) tomato paste
2 tsp italian seasoning
1/2 tsp garlic powder with parsley
1 small onion diced (optional)
16 slice pizza pepperoni slices (my addition not in orginal school recipe)
8 slice american cheese
8 cherry tomatoes (we omit these)
4 hamburger buns toasted. (each half will be anopen faced sandwitch)
1/2 c parmesan cheese

Steps:

  • 1. Mix hamburger. tomato paste, Italian seasoning, garlic powder, Parmesan cheese and diced onions together. shape into 8 burgers. and flatten onto a lipped baking pan. put in oven on 400 turning once until done. Top with 2 pieces of pepperoni, then braking the single in half Cris cross over top of burger. Broil to melt cheese and put each burger on a 1/2 of a bun. making 8 open faced burgers. Top with a cherry tomato cut in half

1/2 lb ground sausage
12 ounces Spam
1 teaspoon sage
1 teaspoon oregano
1 teaspoon parsley
2 -3 cups spaghetti sauce
1/2 lb cheddar cheese, grated
1/2 lb American cheese, grated
8 -10 buns

Steps:

  • Grate the spam.
  • Brown the red meats and let cool.
  • mix remaining ingredients except buns.
  • Spread mixture on buns and broil/bake for 20 minutes.
  • Enjoy !

Pourable Pizza Crust from a quantity 1988 USDA school cafeteria recipe. Made in a half-sheet pan (13" x 18" x 1") . The recipe makes a nice, soft bread like crust. This is the pizza crust that's been served at schools for the past 25 years. This recipe would be really good for something like a kids birthday party. The dough has the consestency of very thick pancake batter. You pour it into a sheet pan, with the help of a rubber spatula. I like it because it saves all the rolling and fussing with normal pizza dough.

1 3/4 teaspoons active dry yeast
2 2/3 cups all-purpose flour
3/4 cup instant nonfat dry milk powder
2 1/2 tablespoons granulated sugar
1 teaspoon salt
1 1/2 teaspoons vegetable oil
1 2/3 cups water, warm (130 degrees F)
2 tablespoons cornmeal

Steps:

  • 1. Mix dry yeast, flour, dry milk, sugar, and salt together in stand mixer.
  • 2. Add oil to dry mixture mix for 4 minutes on low speed.
  • 3. Add water to dry ingredients. Mix in stand mixer for 10 minutes on medium speed. Batter will be lumpy.
  • 4. Lightly coat a half-sheet pan (13" x 18" x 1") with non-stick pan release spray. Sprinkle half-sheet pan with 2 Tbsp cornmeal.
  • 5. Pour or spread dough with rubber spatula into half-sheet pan. Let stand for 20 minutes on counter (allows dough to rise).
  • 6. Prebake until crust is set and can support sauce and toppings: Conventional oven: 475° F for 10 minutes. Convection oven: 425° F for 7 minutes
  • 7. Top prebaked crust with your favorite pizza sauce and toppings.
  • 8. Bake until heated through and cheese is melted: Conventional oven: 475° F for 10-15 minutes. Convection oven: 425° F for 5 minutes
  • 9. Portion by cutting each half-sheet pan 2 x 5 (10 pieces per pan).

I just got a Kitchenaid mixer and was looking up recipes that worked well with it and found this recipe. Sounds interesting. I'm on the lookout for a favorite pizza crust. Still haven't found one that I just LOVE yet.

1 3/4 tsp active dry yeast
2 2/3 c all-purpose flour

  • 4. For 10 servings, lightly coat 1 half-sheet pan (13" x 18" x 1") with pan release spray. Sprinkle half-sheet pan with 1/2 oz (approximately 2 Tbsp) cornmeal.
  • 5. Pour or spread 1 lb 11 1/2 oz (1 qt 1/2 cup) into each half-sheet pan. Let stand for 20 minutes
  • 6. Prebake until crust is set: Conventional oven: 475° F for 10 minutes Convection oven: 425° F for 7 minutes
  • 7. Top each prebaked crust with desired topping.
  • 8. Bake until heated through and cheese is melted: Conventional oven: 475° F for 10-15 minutes Convection oven: 425° F for 5 minutes
  • 9. Portion by cutting each half-sheet pan 2 x 5 (10 pieces per pan).

8 oz shredded cheddar cheese
1/4 tsp parsley
1/8 tsp dried orango leaves
4 hamburger buns, split
dash(es) salt and pepper

  • 1. In a skillet cook beef until browned. Season with salt and pepper. Add spam, spaghetti sauce, cheese, parsley and oregano, mix well. Heat broiler. Spread spam mixture over cut sides of bun halves. Broil until browned and cheese is melted.

Steps:

  • Cook hot dogs. Drain water. Place in chopper and chop until well chopped. Place in bowl with remaining inexpedience. Cook over low heat about 10 minutes. Spoon mixture onto buns top with mozzarella. Place on a baking sheet and bake @ 400 for 4 to 5 minutes. Serve.

PIZZA BURGERS (from the cooks at PLHS) (from Lynda Allen 3/2015) These were served in the school lunch cafeterias all through the 1970's and 80's. It was one of those mystery meat scenarios, but man were they good.

1 (6 ounce) can tomato paste

Steps:

  • Brown ground beef.
  • Drain and add ground Spam.
  • Add seasonings, tomato sauce and paste.

Got this recipe from my brother who found it online (http://www.schoolpizzarecipe.com). Saving it here for posterity's sake and so I have access to it when the mood strikes. :-) Water temps have been adjusted to yeast package directions when adding water to complete flour mix and not pre-activating yeast with sugar water, but always follow package directions. Some corrections have been made to transcribed recipe.

3/4 cup powdered milk
2 tablespoons sugar
1 (1/4 ounce) packet fast rising yeast
1 teaspoon salt
1 2/3 cups warm water (120-125 degrees)
2 tablespoons vegetable oil
1/2 lb Italian sausage
1/2 lb ground chuck
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces shredded mozzarella cheese
6 ounces tomato paste
1 1/2 cups water
1/3 cup olive oil
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
1/2 teaspoon dried rosemary, crushed

Steps:

  • Crust:.
  • Preheat oven to 475 degrees. Spray pan with Pam and lay Parchment paper down (Pam makes it stick).
  • In a large bowl - Add flour, powdered milk, sugar, yeast, salt - whisk to blend.
  • Add oil to warm water (120-125 degrees) - pour into your mixture (Follow temps on yeast package).
  • Stir with a wooden spoon until batter forms - don't worry about lumps - you just want no dry spots.
  • Spread dough on pan using fingertips until it's even. If dough doesn't want to cooperate, let rest 5 minutes and try again.
  • Bake just the crust for 8-10 minutes - remove from oven and set aside.
  • Brown meats until it resembles crumbles - drain meat and set aside.
  • Get out the pizza sauce and add to partially baked crust. Assemble in the following order:.
  • Sauce - spread all over crust.
  • Sprinkle meats.
  • Sprinkle cheese.
  • Bake at 475 degrees for 8-10 minutes until cheese melts and begins to brown.
  • Remove from oven - let stand 5 minutes.
  • Cut in slices and serve!

1 tsp salt
1-2/3 cup warm water (110-115)
2 T vegetable oil
1/2 lb Italian sausage
1/2 lb ground chuck
1/2 tsp pepper
1/2 tsp salt
1 (8oz) block mozzarella cheese
1 (6oz) can tomato paste
1 1/2 cups water
1/3 cup olive oil
2 cloves garlic minced
1 t salt
1 tsp pepper
1/2 T dried oregano
1/2 T dried basil
1/2 t dried rosemary

Steps:

  • Crust: Preheat oven to 475. Spray 18 x 13 sheet pan with Pam and lay parchment paper down. Add flour, powered milk, sugar, yeast, and salt to a large bowl. Whisk to blend. Add oil to warm water.
