1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 1/2 teaspoons soy sauce
2 garlic cloves (minced)
1/4 teaspoon pepper
1 tablespoon extra virgin olive oil
1 lb green beans

Steps:

  • Cook green beans as you normally would in a saucepan of boiling water. (usually take about 5 minutes). Drain beans in colander. When drained put beans in a bowl (with a little extra room for mixing).
  • In a small bowl (seperate from the one the green beans are in) wisk all ingredients except for the olive oil. When all are mixed well pour olive oil in the bowl wisking continuously until the oil is well blended into the mixture.
  • When the sauce is done pour over the beans, then "toss" the beans (salad tongs work the best). Being sure to evenly coat the beans.

My boyfriend cooked this for a dinner a couple of week ago. It was so tasty and tangy, that I could not believe that it was green beans (1 of my least favorite vegetables) Maybe it is because I like that lemony-tangy flavor, but I think it is a great and EASY way to give something extra to vegetables. Oh, he told me he got the recipe from the Stop & Shop website. I hope you all like it as much as I do. Try to exchange the broth and the lemon juice with instant lemon flavor iced tea (prepared as if you were going to drink it) for an extra flavor kick.

1 tablespoon butter
1 sweet onion, finely chopped
1 garlic clove, finely chopped
1 lb green beans
1/2 cup fat free chicken broth
1 teaspoon lemon juice

Steps:

  • In a nonstick skillet melt the butter and then add the chopped onion and the chopped garlic. Cook on medium heat until the onion gets tender and clear.
  • Add the green beans and don't forget to stir frequently. Let everything cook for 1 or 2 minutes.
  • Add the chicken broth and the lemon juice, let it boil and then reduce heat.
  • Let it simmer for 4 to 5 minutes or until you see the green beans are crisp.

This dish is from Camp Fire Girls Day Camp. It was so tasty, my mother continued making it through the years as a way to get me to eat veggies. My family has enjoyed it also. As the kids get older, you can spice it up a bit with onion, garlic, tomatoes, etc. Great for those days when you can't decide what to cook. Just add cornbread and you've got the whole meal.

1 small red bell pepper, cut into very thin strips
1 clove garlic, finely chopped

Steps:

  • Cook green beans to desired doneness as directed on bag. Drain; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, melt butter over medium-high heat. Cook bell pepper and garlic in butter 2 to 4 minutes, stirring constantly, until bell pepper is crisp-tender. Stir in walnuts; cook until hot.

While we love the snap of quickly blanched green beans, we also love this preparation, which leaves the green beans almost meltingly tender. They're ready when they are completely soft and cooked through, and all the delicious seasonings have been absorbed by the beans. They are perfect alongside grilled or baked fish, or with our Veal Meatballs (page 48).

Yield Serves 4 to 6

Number Of Ingredients 6

2 pounds green beans, trimmed
2 tablespoons olive oil
4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons salt or to taste
1/4 cup tomato paste

Steps:

  • Bring a large pot of salted water to a boil. Submerge the beans in the boiling water and cook, stirring once or twice, for 4 minutes. Drain and set the beans aside.
  • Heat the olive oil in a large pot over medium heat. Add the garlic, red pepper flakes, and salt and cook, stirring frequently, until the garlic is just beginning to brown, 1 to 2 minutes. Add the tomato paste and continue cooking, stirring constantly, until the tomato paste has turned a deep, brick-red color, about 10 minutes.
  • Add the green beans and 1/4 cup water to the pot and continue to cook, stirring constantly, until the beans and tomato paste have mixed completely and all of the water has evaporated, about 10 minutes. If the water evaporates too quickly, add a few extra tablespoons so that the beans have time to cook fully; they should be very tender. Taste and adjust the seasoning. Serve immediately.
