SPINACH AND PEAS



Spinach and Peas image

Coarse salt
1 pound (about 1 cup) English peas, shelled
1 pound baby spinach, trimmed and well washed
2 tablespoons extra-virgin olive oil
2 large shallots, thinly sliced
Freshly ground pepper

Steps:

  • Prepare an ice water bath; set aside. Line a baking sheet with a cooling rack; set aside.
  • Bring a large pot of water to a boil. Add a generous amount of salt and the peas. Cook until bright green, 3 to 4 minutes. Using a slotted spoon, transfer to ice water bath to stop the peas from cooking. Drain, shaking off excess liquid; set aside. Add the spinach to the boiling water and cook, just until wilted, about 1 minute. Drain, squeezing out excess moisture, and transfer to wire rack to dry.
  • Heat the oil in a large skillet over high heat. Add the shallots and cook, stirring frequently, until translucent, but not brown, about 2 minutes. Stir in peas, and cook 1 minute. Add the spinach, tossing to combine, and heat through, 1 to 2 minutes more. Season with salt and pepper. Serve immediately.

  • In a large skillet, saute onions and red pepper in oil until onions just begin to soften. Add peas; cook, uncovered, stirring occasionally, for 10 minutes or until heated through. Stir in mint and cook for 1 minute.

3/4 lb fresh peas or 3/4 lb thawed frozen peas
3/4 lb asparagus, cut obliquely,into 1 inch pieces
1 tablespoon olive oil
1 1/2 teaspoons unsalted butter
1 small red onion, sliced in 1/8 inch rounds
1 large red pepper, seeded,cut into 1/8 inch strips
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup low sodium chicken broth

Steps:

  • Bring a large pot of salted water to a boil.
  • Boil the fresh peas and asparagus separately until crisp-tender, about 1 minute each.
  • Plunge into cold water to stop the cooking process; drain.
  • In a large skillet, heat olive oil and butter over medium heat.
  • Add onion and bell pepper and cook until slightly wilted, about 3 minutes.
  • Add peas, asparagus, salt and pepper, and cook for 1 to 2 minutes.
  • Increase heat to high and add chicken stock; cook until reduced by half-- about 3 minutes.
