1 lb pork sausage, sliced into patties
3 tablespoons flour
1 cup milk
1 (14 ounce) can Rotel tomatoes & chilies, drained

Steps:

  • Cook sausage patties in a black cast iron skillet till done, obviously. Then remove the sausage and put it on some paper towels to blot up some of the grease.
  • Drain grease from pan leaving only enough to coat the bottom (about 2 tablespoons), add a handful of flour (3 tablespoons will do) to the grease and cook it, stirring ALL the time, till it turns brown.
  • Add the milk to the browned flour and stir till all the lumps are gone and it's thick. Add the drained Ro-Tel tomatoes and stir till it's the consistency that you like. (add more milk if it's too thick).
  • Crumble up the sausage and add back to the gravy then spoon it over hot biscuits.
  • Then turn around and slap the person next to you on account of it's so good you just have to slap somebody!

1 1/2 lb smoked sausage cut into bite size pieces
1 large white onion, chopped
1 Tbsp minced garlic
24 oz can tomato sauce
10 oz can diced tomatoes with chilies
1 can(s) whole tomatoes
1 tsp cajun seasoning

Steps:

  • 1. Add all ingredients in a skillet and simmer until tender and gravy is desired consistency.
  • 2. Serve over white rice

Well, again its my moms, but who better to learn from than Grandma.. mom would make this.. and it was a devine tart dish.. and so tasty,,, i love something tart..

2 pound(s) link sausage.. eckrich polska
2 can(s) tomato sauce
1 medium chopped onions
3 sprigs chopped celery
2 cup(s) water
1 tablespoon(s) garlic powder
1 tablespoon(s) onion powder
Salt to taste
Pepper to taste
3 cup(s) cooked rice

Steps:

  • Cut sausage into 1-2 inch links and cut into half.. like a butterfly or completely in half (easier) fry in about 3 Tablespoons of vegetable oil till browned and turning them over.. remove from pan to get them all done..
  • Then add to pan the onion and celery and cook till wilted not too much, add tomato sauces and water.. and garlic and onion powders allow to cook down and reduce a tad till rethickened add sausage back and allow to simmer for at least 30 minutes.. then serve over rice..
