1 unbaked pastry shell (9 inches)
1 pound bulk Italian sausage
1 cup cream-style cottage cheese
1 large egg
1-1/2 cups warm mashed potatoes (without added milk and butter)
1/4 cup sour cream
1/2 teaspoon dried oregano
1/2 to 3/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons butter, melted
1 cup shredded cheddar cheese
Cherry tomatoes, quartered
Minced fresh parsley, optional

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 7 minutes. Remove from the oven and remove foil; set aside. Reduce heat to 350°. , In a large skillet, cook sausage until no longer pink; drain well on paper towels. Place cottage cheese and egg in a blender; cover and process until smooth. Transfer to a large bowl; stir in potatoes, sour cream, oregano, salt and pepper., Place sausage in pastry shell; top with potato mixture. Drizzle with butter. Bake for 50-60 minutes or until a thermometer reads 160°. Sprinkle with cheese; let stand until melted. Garnish with tomatoes tossed with minced parsley if desired.

6 potatoes
5 toscana sausages
4 italian tomatoes
1 onion, half chopped, half grated
1 green chilli, chopped
1 tablespoon butter
2 tablespoons oil
7 oz mozzarella cheese
parmesan cheese
1 cup milk
¼ cup fresh parsley, chopped
¼ cup green onion, chopped
3 teaspoons salt
1 teaspoon pepper

Steps:

  • Peel the potatoes and put in a large pan with water along with the sausages. Cook until the potatoes are tender enough to be mashed.
  • Drain and mash the potatoes. Set aside. Chop the sausages and set aside.
  • In a large pan, add the butter, ½ grated onion, mashed potatoes, and milk. Mix until it becomes a puree. Season with salt and pepper. Set aside.
  • In a large pan, put the oil, chopped onion, green chilli and mix until the onion is transparent.
  • Add the chopped sausage, tomatoes, and salt. Cook until the tomatoes are soft and become a sauce. Sprinkle in the parsley and green onions. Mix gently. Set aside.
  • Preheat the oven to 200ºC (400ºF).
  • In a large, oven-safe casserole dish, smooth a layer of half the potato puree, a layer sausage sauce, mozzarella, then the remaining potato puree.
  • Sprinkle the top with parmesan cheese and chopped parsley.
  • Bake for 35 minutes or until the cheese is melted and the top layer is turning it is golden.

1 can (14-1/2 ounces) Italian diced tomatoes, lightly drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 cups shredded Italian cheese blend, divided
1 package (24 ounces) refrigerated garlic mashed potatoes

Steps:

  • Preheat oven to 375°. In a Dutch oven over medium heat, cook sausage, crumbling meat, until no longer pink, 5-6 minutes; drain. 1 pound ground beef
1 medium onion, finely chopped
2 cups marinara sauce
1/8 teaspoon salt
1/8 teaspoon pepper
TOPPING:
1 cup all-purpose flour
1/4 cup grated Parmesan cheese
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Italian seasoning
1/2 cup 2% milk
1/4 cup butter, melted

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the marinara sauce, salt and pepper; cook and stir for 8-10 minutes or until thickened. Spoon into four 8-oz. ramekins or custard cups; set aside., In a small bowl, combine the flour, cheese, baking powder, salt and Italian seasoning. Stir in milk and butter just until moistened. Spoon dough over meat mixture; place ramekins on a baking sheet., Bake at 450° for 12-15 minutes or until golden brown. Freeze option: Cover and freeze unbaked pies. Enjoy this ingenious take on a family favourite, sausage and mash. It brings the two ingredients together into one hearty pie that can be easily frozen

Number Of Ingredients 14

1 tbsp sunflower oil
8 pork sausages
25g butter
2 onions, finely sliced
pinch of golden caster sugar
2 tbsp plain flour
1 tbsp tomato purée
1 tbsp red wine vinegar
500ml beef stock
peas, to serve (optional)
1.25kg King Edward or Maris Piper potatoes, cut into large chunks
150ml whole milk
25g butter
25g mature cheddar, coarsely grated (optional)

Steps:

  • Heat the oil in a frying pan and gently cook the sausages over a medium-high heat for 10-12 mins, turning them until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Tip in the onions, stirring them into the butter, then sprinkle over the sugar and fry for 8-10 mins until the onions are golden. Scatter over the flour and stir to make a paste, then add the tomato purée. Cook for a minute, then add the vinegar, pour in the stock and bring to the boil. Turn down to a simmer. Tip in any juices from the sausages, then cut the sausages into thick slices and add to the pan. Simmer everything together for 5 mins until you have a glossy onion gravy. Tip the mixture into a baking dish.
  • To make the mash, tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked (the tip of a knife should slide in easily). Drain and leave for a minute. Pour the milk into the pan and bring to a simmer, then tip in the drained potatoes and butter, and mash thoroughly. Season to taste.
  • Top the sausages and gravy with the mash, starting from the edge of the dish and working your way into the middle. Use a fork to scrape lines in the topping and scatter over the cheese, if using. Can be assembled, covered and chilled for up to two days or frozen for three months. Defrost completely before cooking. Heat the oven to 200C/180C fan/gas 6. Bake the pie on a tray for 35-40 mins until the top has browned. Leave to cool for 5 mins before scooping straight from the baking dish at the table and serving with peas, if you like.

This is a recipe my Irish aunt gave me. Her husband is Italian, and she developed this recipe to blend things they both like. It is a variation of Shepherd's Pie. For richer flavor, substitute beef broth for water in gravy.

1 tablespoon olive oil
1 pound bulk Italian sausage
2 tablespoons sausage drippings
2 tablespoons margarine
2 apples, cored and sliced
1 large onion, sliced
salt and ground black pepper to taste
1 teaspoon dried oregano
1 tablespoon all-purpose flour
1 cup water
3 cups prepared mashed potatoes
1 tablespoon melted margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart casserole dish.
  • Heat olive oil in a skillet over medium heat; cook and stir Italian sausage until browned and crumbly, about 10 minutes. Use a slotted spoon to transfer sausage to prepared casserole dish. Drain drippings and reserve 2 tablespoons drippings in the skillet.
  • Melt 2 tablespoons margarine in a separate skillet over medium heat; cook and stir apple and onion slices until tender, about 8 minutes. Place apple and onion in casserole dish with sausage.
  • Lightly stir sausage, apple, and onion together; season with salt, black pepper, and oregano.
  • Brown flour in reserved drippings in skillet over medium heat. Whisk water into flour until thick gravy forms, about 3 minutes.
  • Pour gravy over sausage mixture in the casserole dish; spread mashed potatoes over the top with a spoon, creating peaks. Lightly brush mashed potatoes with 1 tablespoon melted margarine.
  • Bake in the preheated oven until the potatoes are lightly browned and the sausage mixture is bubbling, about 30 minutes.
