2 TBS kosher salt
2 tsp Paprika
2 tsp Sugar
1 tsp Black Pepper
3/4 tsp ground Ginger
1/2 tsp ground red pepper
2whole chicken 4-5 lbs
2 cans Ginger Ale or Ginger Beer
Ginger Ale Glaze...........
2 cups ginger ale or ginger beer
2 TBS light brown sugar
2 tsp grated fresh ginger
1/8 tsp ground red pepper.
Bring to boil over high heat, reduce to medium and cook stirring occasionally, 15 - 20 min., or until reduced to 1/4 cup

Steps:

  • Stir together first 6 ingredients. Sprinkle mixture in chicken cavity and rub outside of chickens. light charcoal and place on both sides of grill. Place disposable aluminum pan in center with water in pan. Place chickens in center of the grill and grill at med-high heat for 1 1/4 to 1 1/2 hrs. Remove from grill and let sit for 10 minutes. Carve and serve with Ginger Ale Glaze.
