Oven-Baked, Best Ever, Juiciest Chicken image

This is a variation of a recipe from Clarks Outpost in Tioga, Texas. It's best to start it the day before so it has enough time to marinate. Everybody raves about it!

10 cups cold water
2 cups golden brown sugar, packed
1 tablespoon coarse salt (like Sea Salt)
2 (3 1/2-4 lb) roasting chickens, halved lengthwise
1 cup barbecue sauce
3 tablespoons fresh coarse ground black pepper
3 tablespoons dark brown sugar
3 tablespoons paprika
2 tablespoons salt
1 teaspoon cayenne pepper

Steps:

  • Mix 10 cups water, sugar and salt in a large roasting pan or stock pot.
  • Place chicken skin side down in the water mixture (add more water if necessary to cover chicken.).
  • Cover and refrigerate overnight.
  • Preheat oven to 300 degrees.
  • Drain chicken and pat dry.
  • Place chicken halves skin side down in a single layer on heavy large baking sheet with rim, that has been lined with aluminum foil, preferably Release foil.
  • Brush each half with 2 tablespoons barbecue sauce.
  • Sprinkle with 1-1/4 teaspoon of Rub.
  • Turn halves over and repeat.
  • Bake chicken skin sides up, basting every 20 minutes (VERY IMPORTANT) with pan juices, for about 2 hours.
  • THIS IS WORTH THE EFFORT!
  • If you use chicken parts, like breast, thigh or drumsticks, reduce the cooking time to 1 hour, 30 minutes-ish. And reduce cooking time even more if using a convection oven.

Simple Baked Chicken Breasts image

Simple basic recipe for cooking up a bunch of skinless boneless chicken breasts.

4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 tablespoon coarse sea salt
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste
1 tablespoon water, or as needed

Steps:

  • Preheat convection oven to 400 degrees F (200 degrees C).
  • Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
  • Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

SARAH'S OVEN BAKED CHICKEN

This is how my husband and I make simple chicken, though it's best with fresh chicken but frozen chicken, when thawed, works just as well. We use soy sause as a base for the spices and brush it on with a pastry brush, but you can use a bag if you need to.

2 -3 skinless chicken breasts
1 teaspoon pepper (I use a mix of black, red & white)
2 teaspoons lemons, rind of or 2 teaspoons orange rind
1 -2 teaspoon garlic or 2 cloves garlic, minced well (to taste)

Steps:

  • Preheat oven to 375 degrees F& spray either a broiler pan, cookie sheet with sides, or a shallow casaroll dish.
  • Trim the fat and skin off of the chicken breasts.
  • You can place all the ingrediants in a bag and shake them together, or mix them with some water or soy sauce to brush onto the chicken.
  • Make sure the spices are evenly distributed or you'll end up with one lemony peice and one garlicky piece.
  • Bake in oven for 10 minutes then turn over and back until done, normally 10 minutes for my oven.
  • Serve with some rice or even mac& cheese and enjoy!

BAKED SWEET-AND-SOUR CHICKEN

3 tablespoons ketchup
2 tablespoons orange marmalade or apricot preserves
2 teaspoons low-sodium soy sauce
2 teaspoons balsamic vinegar
One 1-inch piece ginger, peeled and finely grated
Large pinch of cayenne pepper (optional)
2 bell peppers (1 red, 1 yellow), quartered lengthwise and seeded
1 bunch scallions, cut into 3-inch pieces
3 teaspoons extra-virgin olive oil
Kosher salt
8 skin-on, bone-in chicken thighs (3 to 3 3/4 pounds)
Cooked white rice, for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Make the sweet-and-sour sauce: Whisk the ketchup, marmalade, soy sauce, vinegar, ginger and cayenne in a small bowl. Put the bell peppers and scallions on a rimmed baking sheet and toss with 2 tablespoons of the prepared sauce, 1 1/2 teaspoons olive oil and a pinch of salt.
  • Heat the remaining 1 1/2 teaspoons olive oil in a large skillet over medium-high heat. Sprinkle the chicken with 1/2 teaspoon salt. Working in batches, add the chicken to the skillet skin-side down and cook, undisturbed, until the skin is golden and slightly crisp, about 4 minutes. Place skin-side up on the baking sheet with the vegetables.
  • Brush the chicken with half of the remaining sweet-and-sour sauce. Bake until a thermometer inserted into the thickest part registers 165 degrees F, 20 to 25 minutes. Divide the chicken and vegetables among plates. Serve with rice and the remaining sauce.

2 tablespoons butter
½ cup orzo pasta
½ cup diced onion
2 cloves garlic, minced
½ cup uncooked white rice
2 cups chicken broth

Steps:

  • Melt the butter in a lidded skillet over medium-low heat. Cook and stir orzo pasta until golden brown. Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute. Mix in the rice and chicken broth. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.

OVEN-ROASTED CHICKEN SHAWARMA



Oven-Roasted Chicken Shawarma image

Here is a recipe for an oven-roasted version of the classic street-side flavor bomb usually cooked on a rotisserie. It is perfect for an evening with family and friends. Serve with pita and tahini, chopped cucumbers and tomatoes, some olives, chopped parsley, some feta, fried eggplant, hummus swirled with harissa, rice or rice pilaf. You can make the white sauce that traditionally accompanies it by cutting plain yogurt with mayonnaise and lemon juice, and flecking it with garlic. For a red to offset it, simmer ketchup with red pepper flakes and a hit of red-wine vinegar until it goes syrupy and thick, or just use your favorite hot sauce instead.

2 lemons, juiced
1/2 cup plus 1 tablespoon olive oil
6 cloves garlic, peeled, smashed and minced
1 teaspoon kosher salt
2 teaspoons freshly ground black pepper
2 teaspoons ground cumin
2 teaspoons paprika
1/2 teaspoon turmeric
A pinch ground cinnamon
Red pepper flakes, to taste
2 pounds boneless, skinless chicken thighs
1 large red onion, peeled and quartered
2 tablespoons chopped fresh parsley

Steps:

  • Prepare a marinade for the chicken. Combine the lemon juice, 1/2 cup olive oil, garlic, salt, pepper, cumin, paprika, turmeric, cinnamon and red pepper flakes in a large bowl, then whisk to combine. Add the chicken and toss well to coat. Cover and store in refrigerator for at least 1 hour and up to 12 hours.
  • When ready to cook, heat oven to 425 degrees. Use the remaining tablespoon of olive oil to grease a rimmed sheet pan. Add the quartered onion to the chicken and marinade, and toss once to combine. Remove the chicken and onion from the marinade, and place on the pan, spreading everything evenly across it.
  • Put the chicken in the oven and roast until it is browned, crisp at the edges and cooked through, about 30 to 40 minutes. Remove from the oven, allow to rest 2 minutes, then slice into bits. (To make the chicken even more crisp, set a large pan over high heat, add a tablespoon of olive oil to the pan, then the sliced chicken, and sauté until everything curls tight in the heat.) Scatter the parsley over the top and serve with tomatoes, cucumbers, pita, white sauce, hot sauce, olives, fried eggplant, feta, rice - really anything you desire.
