I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

2 ripe bananas
2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
  • Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

1 cup all-purpose flour
1 tablespoon baking powder
Salt
Freshly ground white pepper
1/4 teaspoon ground cinnamon
Freshly grated nutmeg
1 egg
1 cup buttermilk
2 pounds bananas, peeled and cut into 3-inch chunks on the diagonal
Powdered sugar, for dusting

Steps:

  • Preheat a deep-fryer or a deep pot of oil to 350 degrees F. In a medium bowl, sift together the flour, baking powder, a dash of salt and pepper, cinnamon, and the nutmeg, to taste.
  • In a small bowl, whisk together the egg and the buttermilk. Whisk into the flour mixture until smooth. Let rest for 30 minutes in the refrigerator.
  • Dip the banana chunks in the batter and fry until golden brown, about 4 minutes. Remove and drain on paper towels. Dust with powdered sugar and serve.

3 eggs, beaten
3/4 cup milk
1/4 cup brown sugar
3 cups baking mix
3 ripe bananas, diced
2 cups canola oil, for frying
1 1/2 cups powdered sugar
1 1/2 teaspoons pumpkin pie spice

Steps:

  • For the fritters: In a large bowl, whisk the eggs with the milk and sugar until blended. Stir in the baking mix and bananas until just combined.
  • Heat the canola oil in a large, heavy-bottomed skillet over medium heat. Using a small ice cream scoop, drop the batter into the skillet. Fry in batches until golden brown and cooked through the center, 2 to 3 minutes per side. Remove from the oil and allow to drain on a wire cooling rack set over a baking sheet.
  • For the glaze: Whisk together the powdered sugar, 1/4 cup water and pumpkin pie spice.
  • While the fritters are still warm, pour the glaze over top. Allow the glaze to set up slightly before serving.

1 cup all-purpose flour
1 egg, lightly beaten
1 1/3 cups ice-cold water
1 cup (approximately) canola oil
3 ripe bananas
1/2 cup (approximately) granulated or confectioner's sugar

Steps:

  • Place the flour, egg and about half the water in a bowl. Mix with a whisk for a few seconds, until the mixture is smooth. Whisk in the remainder of the water. If you are not completing the recipe immediately, refrigerate the batter until you are ready to make the fritters.
  • In a large nonstick skillet, heat 1/4 cup of the oil to about 400 degrees. Meanwhile, peel the bananas and, holding them directly over the bowl containing the batter, cut them crosswise into 1/2-inch slices and let the slices fall into the batter.
  • Make 3 or 4 fritters at a time, using about 1/4 cup of the batter for each and pouring it into the hot oil. Spread the mixture lightly to create disks about 3 inches in diameter. Cook for 2 to 3 minutes, turn and cook for 2 to 3 minutes on the other side, until the fritters are nicely browned.
  • Remove the fritters with a slotted spoon and place them on a wire rack to drain. Continue making fritters, adding more oil as needed, until all the batter has been used. Sprinkle the drained fritters generously with sugar and serve immediately.

Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

1 cup plain flour
1/2 cup cornflour
1 tablespoon baking powder
1 cup milk, approx
extra flour, to coat banana

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.
