Categories     appetizer

Time 1h50m

Yield 8 to 10 potato balls

Number Of Ingredients 35

4 pounds Idaho potatoes, peeled and quartered
1/2 cup kosher salt
2 cups warm milk
1 pound unsalted butter, cut in cubes
1 cup olive oil
2 cups chopped Spanish onion
5 to 6 cloves garlic, chopped
1 tablespoon toasted ground cumin
1 tablespoon dry oregano
1 tablespoon smoked paprika
1 1/2 tablespoons kosher salt
1/2 tablespoon fresh ground black pepper
1 bay leaf
2 pounds freshly ground beef chuck (85 percent lean to 15 percent fat)
3/4 cup tomato paste
6 to 8 eggs beaten with 1/2 cup milk
4 cups fine panko breadcrumbs
4 cups coarse panko breadcrumbs
Vegetable or canola oil, for frying
Salsa Ranchera, for serving, recipe follows
10 tablespoons olive oil
1 pound guajillo chile
8 ounces pasilla chile
8 ounces pulla chile
4 to 5 cloves garlic, whole
1 cup chopped onions
1/2 cup chopped bell pepper
1 tablespoon dry oregano
1 teaspoon toasted ground cumin
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1 bay leaf
1 cup chopped fresh tomato
24 ounces tomato puree
16 ounces chicken or beef stock

Steps:

  • For the potatoes: Start by putting the potatoes in a large pot. Cover with 8 cups cold water and add the salt; the water should taste a little salty. Bring to a boil over high heat, reduce to a simmer and cook until they feel tender when poked with a fork or knife. Drain and then mash, adding the milk and butter. Transfer to a bowl and let cool for at least an hour.
  • For the filling: Meanwhile, add the olive oil to a deep skillet over high heat. Add the onions, garlic, cumin, oregano, paprika, salt, pepper and bay leaf. Turn the heat down to medium-high and cook for 5 to 10 minutes. Add the beef and tomato paste, cover and turn the heat down to medium. Cook for about 25 minutes. Remove the lid and stir; the consistency should look like thick chili. Transfer to a pan and spread the mixture out so it cools quickly.
  • To assemble: Start by portioning the cooled potato mixture, about 8 ounces or enough to look like an orange when rolled into a ball. Next, take a ball and flatten with your palms while at the same time maintaining a cup shape in one hand. Then, with an ice cream scooper, fill the potato with the meat filling. Close and seal it with both hands. Repeat with all the potato balls. Set up 3 shallow pans, one with the egg wash and the others with the panko. Take a potato ball and put in the egg, then in the fine panko, back into the egg and then in the coarse panko. Once you have breaded them, put them in the refrigerator to firm up, about 30 minutes. Fill a deep pot about halfway with oil and heat to about 350 degrees F. Carefully drop the potato balls in the oil and fry in batches until golden brown, about 5 minutes. Drain on paper towels and serve with Salsa Ranchera.
  • Start by heating a skillet with 5 tablespoons of the olive oil and adding the chiles and whole garlic cloves to toast for a few minutes. Then add the onions, bell peppers, oregano, cumin, salt, pepper and bay leaf. Then add the fresh tomatoes, tomato puree and stock, and reduce by a third at a low simmer; this takes about 15 minutes. Let cool for 20 minutes. Then place in a blender and puree. Heat the remaining 5 tablespoons olive oil in another pan. Strain the sauce through a fine mesh strainer and add to the pan. Fry the sauce in the hot pan and reduce until thick, 15 to 20 minutes. Adjust the seasoning if necessary.

CHICKEN WITH RANCHERA SALSA

Chicken with Ranchera Salsa image

Here diced heirloom tomatoes, onion, garlic, and chiles are broiled in the baking dish to make a ranchera sauce for the chicken breasts. It's a one-pan wonder to be served straight from the baking dish, along with a green salad or Humble Beans, and warm corn tortillas for scooping up the sauce.

Provided by Curtis Stone

Time 28m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds heirloom tomatoes, cut into large cubes
1 small white onion, finely diced (1 cup)
1/3 cup chopped fresh cilantro, plus 1/2 cup leaves for garnish
2 jalapeno peppers, seeded if desired (for less heat) and finely chopped
3 garlic cloves, finely chopped
2 tablespoons plus 1 teaspoon extra-virgin olive oil
Kosher salt
4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 cup grated pepper Jack cheese (about 4 ounces)
1/4 cup crumbled queso fresco or feta cheese

TACOS WITH MUSHROOMS, CABBAGE AND CHIPOTLE RANCHERA SALSA

TACOS WITH MUSHROOMS, CABBAGE AND CHIPOTLE RANCHERA SALSA image

Categories     Mushroom

Number Of Ingredients 19

1 tablespoon extra virgin olive oil
1 pound mushrooms, cut in thick slices
1 bunch scallions, white and light green parts, finely chopped
2 garlic cloves, minced
Salt and freshly ground pepper to taste
1 small head cabbage
1/4 cup chopped cilantro
1/4 to 1/2 cup Chipotle Ranchera Salsa
8 corn tortillas
Queso fresco to taste
For the salsa:
1 small onion, cut in half, or 1/2 medium onion
1 14-ounce can tomatoes, with juice
1 or 2 serrano chilies or jalapeños (more to taste), seeded for a milder salsa, roughly chopped
1 garlic clove, roughly chopped
1 chipotle chili in adobo, stemmed
1 tablespoon canola oil
Salt to taste
Water as needed

Steps:

  • 1. Salsa: Line a baking sheet with foil and place the onion on it. Broil 5 to 10 minutes, turning once, until charred. Remove from the heat and when cool enough to handle, cut in large dice and place in a blender with the tomatoes, serranos, garlic and chipotle. Purée until smooth. Heat the canola oil in a heavy saucepan or skillet over medium-high heat until a drop of the purée sizzles immediately on contact. Add the purée, season to taste with salt and cook, stirring often, until the sauce darkens and thickens, leaving a canal when you run the cooking spoon across the bottom of the pan, about 15 minutes. If you want a thinner sauce, thin out with water as needed. Remove from heat. Taste and adjust salt. 2. Heat a large, heavy skillet over medium-high heat and add the olive oil. When the oil is hot, add the mushrooms and sear, stirring often or tossing in the pan, until they are lightly colored and beginning to sweat, 3 to 5 minutes. Add the scallions and cook, stirring, for about 1 minute, until tender. Add the garlic and cook, stirring, until fragrant, 30 seconds to a minute. 3. Season the mushrooms with salt and pepper and stir in the cabbage. Cook, stirring often, until the cabbage is tender, about 5 minutes. Add salt and pepper to taste and stir in the cilantro and 1/4 to 1/2 cup of the salsa (to taste). 4. Heat the tortillas. Top with the mushroom/cabbage mixture, sprinkle with cheese if desired, and serve.

SALSA RANCHERA

Salsa Ranchera image

This is a recipe for what is marketed as "picante" sauce. Picante is the Spanish word for spicy or spicy hot, and this dish can be adjusted from mild to wild, depending on your taste. I was given the foundation for this recipe by an old girlfriend who still lives in Monterey, Mexico. The original recipe called for boiling the tomato, onion and peppers for about 5 minutes before blending them. Also she only added a little salt and cilantro to her salsa. I "doctored" it up a little and everyone agreed (even the old girlfriend) that it was much more flavorful my way. For the record, I don't boil any ingredient in this recipe. I like the 100% fresh flavor of it. This is the recipe I use to make salsa for my fiance, because, unlike my fiance (and most people) I like mine eardrum burning hot.

Categories     Sauces

Time 30m

Yield 1 Quart

Number Of Ingredients 10

4 tomatoes (2 1/2-inch to 3-inch in diameter, the redder the better)
1/2 yellow onion (2 1/2-inch to 3-inch in diameter)
2 dried arbol chiles (3-inch long, stems removed)
1 serrano chili pepper (3-inch long, stem removed)
1 lime, juice and pulp of
1/2 cup of loosely packed cilantro leaf
4 garlic cloves (Aprox 1 1/2 - 2 Tblsp chopped Garlic)
1/4 cup ground cumin
1 teaspoon salt
1 tablespoon paprika (for color) (optional)

Steps:

  • Section the tomatoes and onion into pieces small enough for your food processor or blender to work effectively.
  • I use a blender set on it lowest setting (mine says stir).
  • **In a blender, slowly add all the ingredients, starting with the tomatoes and onions.
  • Make sure not to put too much into your blender bowl at any one time, or it will not chop properly.
  • Once the tomato and onion mixture is nice and smooth, continue to blend and incorporate all the other ingredients.
  • **In a food processor, add all ingredients to the bowl and pulse until the mixture can withstand the continuous operation of the food processor.
  • Process until smooth.
  • FINAL INSTRUCTIONS-- Get some chips and a family member or a friend to help with the final adjustments.
  • I usually have to tweak the amount of salt, cumin, cilantro or garlic to make it "perfect".
  • If the onion or other seasonings are too much, add another tomato.
  • Your salsa can be enjoyed now, but it is best after an overnight stay in the refrigerator.
  • To make it the way I like it, I add one more tomato, one more chile arbol, at least one more large serano pepper and one more teaspoon of salt.
  • I have also substituted the seranos with jalepeños or habeñeros.

SALSA RANCHERA

Salsa Ranchera image

Quick and easy, picante cooked tomato sauce for any Mexican dish, especially good for Huevos Rancheros, Enchiladas, etc.

Provided by TJW2725

Categories     Mexican

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

1 lb roma tomato, grated*
1 cup chicken broth
1/4 large white onion, roughly chopped
4 fresh serrano peppers, stems removed*
4 tablespoons fresh cilantro
3 garlic cloves
1 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon dried oregano (Mexican preferred)
1 tablespoon fresh savory
salt and pepper

Steps:

  • Add all ingredients to a blender and blend until very smooth, it should be fairly thin.
  • Heat 2 TB oil in a large skillet(no teflon) over high heat until very hot, but not smoking. Add the contents of the blender to the skillet and "fry" the sauce, stirring constantly, and scraping the bottom of the skillet to keep from sticking. Be careful, it makes a mess in the kitchen, but it is well worth it, be sure to wear your apron! Fry the sauce for 10-15 minutes, until it is reduced and the flavors have blended well. Keep warm and use immediately, or store it in the fridge for 2 days, or in the freezer for two months. If using frozen, allow to thaw first and reblend quickly as it tends to separate.
  • * Cut the tomatoes in half and grate them with your cheese grater right down to the skin. This retains the pulp, and not the skin, without having to boil them. Discard skins. You can used canned tomatoes too if you don't have time.
  • * Use chipotles for a nice smoky flavor.
  • * Amount of chiles given makes a picante dish. Omit if you don't like it spicy, but I recommend at least one to give it some flair.
