Another recipe for all you Salmon Lovers!! For this recipe you will use fresh plum tomatoes to make a quick pan sauce for the salmon. Oh so good!

3 tablespoon(s) olive oil
1 medium onion, peeled and quartered
4 clove(s) garlic, peeled and crushed
1 sprig(s) fresh thyme, or 1 tsp dried thyme
2 sprig(s) fresh parsley, or 1 tsp dried parsley
4 - salmon fillets (8 ounces each)
- salt and pepper to taste
1 cup(s) white wine
4 medium tomatoes, cut into 1 inch cubes
8 - fresh basil leaves, chopped, or 2 tsp dried basil

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, thyme and parsley. Saute' for 2 minutes. Drain and discard the oil.
  • Season the salmon with salt and pepper. Add it to the skillet and cook over medium high heat for 3 to 4 minutes. Then turn the fillets over and cook for another 3 minutes.
  • Add the wine, tomatoes and basil to the skillet. Season with salt and pepper. Cook covered, over low - medium heat for 8 minutes. Serve each salmon fillet topped with a generous spoonful of tomato sauce.

FARRO WITH SALMON, CUCUMBER, RADICCHIO AND DILL



Farro With Salmon, Cucumber, Radicchio and Dill image

Salmon steams right over toasty farro, saving you from having to wash an extra pan. The silky fish and chewy grains get a refreshing lemony salad of cucumbers and radicchio on top, which is prepared while the farro cooks. Each bite goes from crunchy cool to warm and comforting, though the salad is also good room temperature or cold. If you don't like the bitter edge of radicchio, try thinly sliced endive or fennel instead. For a salty, creamy hit of flavor, sprinkle the top of the salad with crumbled feta.

5 tablespoons extra-virgin olive oil, plus more as needed
1 onion, finely chopped (1 cup)
Kosher salt and black pepper
2 cups farro (12 ounces), rinsed and drained
1 lemon
3 mini (or Persian) seedless cucumbers (7 ounces)
1 small head radicchio (5 ounces)
1/3 cup packed finely chopped dill
4 boneless salmon fillets (4 ounces each, and about 1-inch thick)

Steps:

  • Heat 3 tablespoons of the oil in a large straight-sided skillet with a lid over medium heat. Add onion, sprinkle with salt and pepper, and cook, stirring often, until starting to turn clear, about 3 minutes. Add farro, sprinkle with salt, and cook, stirring, until the pan is dry and the farro smells toasty, about 2 minutes. Stir in 2 1/2 cups water. Bring to a boil, then cover skillet, reduce the heat to medium-low, and simmer for 20 minutes.
  • Meanwhile, zest the lemon into a large bowl, then squeeze in its juice. Cut the cucumbers in quarters lengthwise, then slice into 1/2-inch slices crosswise (you should have 2 cups); add to the bowl. Quarter and core the radicchio, then thinly slice into 1/4-inch strips (you should have 3 cups); add to the bowl. Add dill, remaining 2 tablespoons oil and a pinch each of salt and pepper to the bowl, and toss until evenly coated.
  • When the farro is done, season the salmon with salt and pepper. Uncover the farro. Most of the water should be absorbed and the grains should be al dente. Set the salmon on top of the farro in a single layer, skin side up if applicable. Cover and steam to desired doneness, 6 to 7 minutes for medium-rare. Remove from the heat. If your salmon has skin, grip a corner with a paper towel and peel off and discard; repeat with the remaining fillets. The skin should come off easily in a single piece.
  • Divide the farro and salmon among bowls, flaking the salmon into pieces if you like, and top with the cucumber salad. Drizzle with olive oil and season with salt and pepper to taste.

There was a time when the appearance of the first ripe tomatoes would have inspired me to make the southern Italian sauce of raw tomatoes, basil, garlic and olive oil. These days, I turn to a Mexican-style salsa fresca: tomatoes, white onion, chili and loads of cilantro and lime. I love salsa with fish, and since it is wild salmon season, the marriage seems opportune. Halibut and swordfish, whether grilled, broiled, roasted, or even steamed, are equally fine. Though the salsa is quick to prepare, it's best if allowed to sit for 15 to 30 minutes before serving. The tomatoes' juices will run, and the flavors will mingle. No more than an hour, though.

2 large fresh ripe tomatoes, or 3 or 4 ripe plum tomatoes, cored and diced
1/2 large white onion, peeled and minced
1/4 habanero or jalapeƱo chili, stemmed, seeded and minced, or to taste
1/2 cup roughly chopped cilantro or flat-leaf parsley leaves
Juice of 1 or 2 limes, to taste
Freshly ground pepper and salt to taste
1 salmon fillet, about 1 1/2 pounds, preferably with skin on
2 tablespoons neutral oil, like corn or canola

Steps:

  • Start a charcoal or gas grill; fire should be moderately hot and grill rack about 4 inches from heat source. Or, heat oven to 500 degrees.
  • Chop tomatoes and combine them in a bowl with onion, chili, cilantro, lime juice and some salt. Set aside.
  • Sprinkle fish with salt and pepper. If grilling, rub fish with a little oil as well; put it on grill, skin side down, and let it sit for 4 to 5 minutes, then turn once (don't worry if part of skin sticks to grill). Cook for about 3 minutes more, until medium-rare.
  • If roasting, heat a large nonstick skillet over high heat for a minute. Add oil and, a few seconds later, salmon, skin side up. Sear for a minute, then transfer to oven and roast until medium-rare, about 10 minutes. Allow to rest for a minute or so, then remove skin. Turn over and serve, passing salsa at the table.

6 ounces salmon fillets
1 bunch fresh basil
1 cup tomatoes, chopped
2 tablespoons olive oil
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Reserve a few basil leaves for garnish, chop the remaining leaves and mix them ina bowl with the tomatoes and olive oil.
  • Place salmon in a baking dish and cover with some of the tomato-basil mixture, reserving the ramainder for later use.
  • Season with salt and pepper to taste.
  • Bake for 15-20 minutes or until the salmon is cooked to taste.

1 1/2 kg roma tomatoes (or equivlent canned tomatoes)
3 tablespoons olive oil
1 small carrot, finely diced
1 large red onion, finely diced (brown works ok too)
2 sticks celery, finely diced
3 garlic cloves, crushed
375 g tomato paste
1 teaspoon brown sugar
2 cups chicken stock or 2 cups vegetable stock
salt & pepper

Steps:

  • Cut a cross in the pointy end of each tomato and place into boiling water for 2-3 minutes. Remove from water and set aside to cool. Remove skins and discard. Chop the tomatoes into 1cm sized pieces.
  • Heat olive oil in a large saucepan, add carrot, onion, celery and garlic and cook uncovered on medium for 5 minutes, stirring occasionally.
  • Stir in tomato paste and cook for 1 minute.
  • Stir in tomatoes, brown sugar and stock and bring to the boil, stirring continually.
  • Reduce head and simmer uncovered for 10 minutes, stirring occasionally.
  • Season with salt & pepper and using a stab mixer, puree the sauce until smooth.
  • Serve with prepared pasta of your choosing.
  • OPTIONS:.
  • Add fresh herbs such as oregano, flat leaf parsley or basil.
  • Add 500g pork&veal mince to make it into a bolagnaise.
  • Can be used for parmigiana.

PASTA AL POMODORO FRESCO



Pasta al Pomodoro Fresco image

1/2 lb. of gemelli or favorite good quality pasta
1 pint of fresh grape tomatoes (wash, dry, & halved lengthwise)
2 large garlic cloves sliced thinly
10 basil leaves chopped roughly
3 tablespoons of extra virgin olive oil
salt and cracked pepper
fresh grated pecorino cheese

Steps:

  • Boil the pasta in salted water according to package direction until al dente.
  • In the meantime, in a large skillet, add the olive oil. When the oil is hot, add the garlic slices and cook them at medium heat stirring often just until lightly golden. Next, add the cut tomatoes, salt and pepper and cook for about 5 minutes at medium high heat. Stir the sauce gently a few times. The sauce should not be soupy.
  • Before removing the sauce from the heat, taste it for flavor. When the sauce is ready, add the fresh chopped basil, turn off the heat and stir one last time.
  • Transfer the cooked strained pasta in the skillet, and toss gently making sure that the pasta is fully ncorporated with the sauce.
  • When serving the pasta, for a delicious fragrant finishing touch, drizzle extra virgin olive oil, and add more fresh basil, fresh cracked pepper and fresh grated cheese on top of each plate.
