SALLIE'S HAMBURGER CASSEROLE

This is a recipe I got many years ago from a friend. I made it every Friday night as part of a pre-game dinner for my son's high school football team. It is a real winner!!!!

1 1/2 lbs ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground oregano
sugar
24 ounces tomato sauce
8 ounces meullers wide egg noodles
1 cup sour cream
12 ounces cottage cheese
1/2 cup chopped onion
2 cups shredded cheddar cheese

Steps:

  • Brown beef and drain well.
  • Add salt, pepper, garlic powder, oregano, sugar and tomato sauce, stirring well. Bring to a boil and simmer uncovered, 15 minutes.
  • Cook egg noodles and drain.
  • To the noodles add the sour cream, cottage cheese and onion - mix well.
  • In a greased 13 x 9 inch pan, alternately layer the beef mixture with the noodle mixture, starting and ending with the beef mixture.
  • Cover with the shredded cheddar cheese.
  • Bake in a preheated 350 degree oven for 30 minutes, uncovered.

An easy to prepare casserole that is a favorite. I got this recipe from an elderly relative who literally created it by adding what she had available at the time to feed a family of 8 on a small budget.

1 lb hamburger
1 medium onion, chopped
1 1/2 cups small macaroni noodles, cooked and drained
1/2-1 teaspoon garlic salt
1 (10 3/4 ounce) can tomato soup
salt and pepper
1 teaspoon brown sugar
3 slices American cheese

Steps:

  • Fry hamburger and onions until brown.
  • Mix into the hamburger and onions: macaroni,garlic salt and tomato soup.
  • Salt and pepper.
  • Add brown sugar.
  • Mix altogether and pour into 9x13 baking dish.
  • Cover with American Cheese and bake 1/2 hour at 350 degrees.

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

My mother originated the recipe in Pennsylvania, I brought it to Texas when I married, I'm still making it in California, and my daughter treats her friends to this oldie in Colorado. 2 pounds lean ground beef (90% lean)
4 pounds potatoes, peeled and sliced 1/4 inch thick
1 large onion, sliced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon beef bouillon granules
1 cup boiling water
1 can (28 ounces) diced tomatoes, undrained
Minced fresh parsley, optional

Steps:

  • In a Dutch oven, layer half each of the meat, potatoes and onion. Sprinkle with half each of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. Cover and cook over medium heat until potatoes are tender, 45-50 minutes. If desired, garnish with parsley.

This is my favorite hamburger casserole. I like to serve it over the top of garlic mashed potatoes. Don't let it's unusual ingredients stop you from trying this--it is wonderful!

1 lb ground beef
1 large onion, chopped
1/2 cup uncooked instant rice
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can condensed tomato soup
1/4 cup water
4 cups coleslaw mix or 4 cups shredded cabbage
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees.
  • Brown beef and onion in a large skillet; drain.
  • Add beef back to skillet and stir in rice, salt pepper, soup and water; mix well.
  • Place coleslaw mix in an ungreased 2 quart casserole dish.
  • Spoon beef mixture over coleslaw.
  • Cover and bake about 45 minutes.
  • Uncover, top with cheese and pop back in oven for another 10 minutes uncovered or until cheese is melted and casserole is hot and bubbly.
