SALISBURY STEAK MEATBALLS
Salisbury Steak Meatballs. Beef meatballs smothered in a delicious homemade gravy! Pure comfort food!

Steps:
- Add beef, breadcrumbs, egg, mustard, ketchup and worcestershire sauce to a large bowl. Combine with your hands or a large spoon.
- Roll into 1 1/2 inch meatballs.
- Heat oil in a large skillet. Working in batches add meatballs and brown on both sides, 2 minutes per side. (They will finish cooking in the sauce). Remove the meatballs and set aside.
- Add onions to the same skillet and cook over medium heat until light brown and caramelized 5-10 minutes. (You can add more oil or a splash of water if the onions are getting too brown)
- Add the butter to the skillet with the onions and melt.
- Next add in the garlic and sauté for 1-2 minutes.
- Add the flour to the skillet and whisk until it forms a thick paste. Cook for 1 minute whisking constantly.
- Slowly pour in the beef broth until it forms a thick gravy.
- Add in worcestershire and season with salt and pepper to taste.
- Return the meatballs back to the pan and simmer for 3-4 minutes or until the meatballs are cooked through.
- Serve immediately over egg noodles or mashed potatoes with fresh parsley for garnish.

- In a large skillet, melt butter over medium heat.
- Add onions and brown sugar to the skillet; saute and stir frequently for 15-20-30 minutes or until onions are golden brown and caramelized.
- Add meatballs and gravy; stir to combine.
- Cover and cook 5-8 minutes or until meatballs are well heated; stir as needed.

- 1) Heat oven to 350 degrees F. Place a wire cooling rack on a baking sheet and coat with nonstick cooking spray. 2) Place bread crumbs (panko) and buttermilk in a small bowl. Let sit for 10 minutes. Add eggs, garlic salt, 1 teaspoon Italian seasoning and 1/4 teaspoon pepper. Mix well. 3) Place ground beef in a large bowl. Add egg mixture and mix to combine. Form into 40 meatballs, about 1 level tablespoon each. Place on prepared rack over baking sheet. Bake meatballs for 20 minutes. 4) Meanwhile, heat olive oil in a large nonstick skillet over medium-high heat. Add onions, cover pan, and cook, shaking pan occasionally, until onions have wilted, about 10 minutes. Remove cover and cook until onions area deep golden brown, about 20 minutes longer. Sprinkle flour over mixture, stir and cook for 1 minute. Gradually add about 2 cups of condensed beef broth, stirring until flour is completely incorporated into liquid. Bring contents of pan to a simmer. Stir in the remaining 1/2 teaspoon Italian seasoning, 1/4 teaspoon pepper and the nutmeg. Add salt to taste. Return meatballs to skillet, lower heat to medium-low, and simmer, stirring occasionally, for about 10 minutes, or until meatballs are heated through. Serve with mashed potatoes or buttered noodles. Yield: 4 to 5 servings.

- Place 1/2 cup diced mushrooms in a large mixing bowl.
- Add the ground beef, ground turkey, 1/2 cup diced onion, 2 Tablespoons tomato paste, egg, ground oatmeal, salt, pepper and 1/4 cup beef broth.
- Mix together well and form into 1 1/2 inch meatballs; set aside.
- In another bowl combine flour, remaining beef broth, remaining 1/4 cup onion, tomato paste, and Worcestershire sauce.
- Heat oil in skillet over medium-high heat and brown the outside of the meatballs.
- Place meatballs in the slow cooker sprayed with nonstick cooking spray.
- Place remaining sliced mushrooms over top.
- Pour sauce over all.
- Cook on low for 6 hours.
- Serve over mashed cauliflower and sprinkle with fresh parsley, if desired.
