- Heat oven to 350 degrees.
- Grease a 13x9-inch baking dish.
- Cook macaroni according to package directions until barely tender.
- Rinse under cold water; drain and transfer to large bowl.
- Mel butter in large skillet over medium-high heat.
- Add onions and cook stirring occasionally for 5 minutes.
- Stir in garlic, mushrooms, cabbage, salt and caraway seeds.
- Reduce heat to medium, cover and cook until cabbage is tender about 7-10 minutes.
- Combine vegetable mixture and spinach with cooked pasta in bowl.
- Stir in cottage cheese, dill, pepper and 1 cup Cheddar cheese.
- Spread evenly in prepared baking dish and sprinkle with remaining 1/3-cup Cheddar cheese.
- Bake 20-25 minutes, until heated through.

- Preheat oven to 400 degrees F (200 degrees C).
- Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
- Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.

- Boil or microwave the potatoes till nearly done. When cool enough, remove the skins. Fry the sliced onions in a little oil till soft. Add the chopped cabbage, the chopped cauliflower, and 6 cloves of the crushed garlic, and fry till the cabbage and cauliflower are just tender.
- Melt the cream cheese, and add to it the soy milk, yogurt and dill.
- Mix together, and add to the vegetable mixture. Drain and rinse the white beans, and add to the vegetable mixture. mix thoroughly, and add salt & pepper to taste. Slice the potatoes into rounds, and put half the slices on the bottom of an oiled baking dish.
- Fill with the mixture. Fry or microwave the fakin' bakin. Cover with the remaining potatoes. Mix the remaining 2 cloves of crushed garlic with a little bit of oil and spread over the potatoes.
- Sprinkle with paprika.
- Bake at 325F for about 20 minutes.
- Sprinkle with the sesame seeds, bake a few minutes more. Serve immediately.
- Variations: Use basil or cilantro instead of dill.

RUSHIN' RUSSIAN RED BEANS
I first came across the idea of red kidney beans in damson sauce in Rose Elliot's "The Bean Book". I've since discovered that Rose's recipe is based on a Russian dish called Lobio. I've made a few tweaks to Rose's recipe, including making it more 'instant' by using canned kidney beans. Traditionally you're supposed to serve this dish cold, but we can rarely manage to wait that long (I did say "rushin") so I serve it hot as a main dish, over baked potatoes; usually with salad and coleslaw. If you can wait, this is lovely served cold as intended. I use my own home made jam in this recipe (Damson Jam Recipe #139722) but if you can't find damson jam, plum jam can be substituted (warning: plum jam is sweeter so I suggest starting off with a smaller amount and adding to taste). Serves 2 as a main dish, 4 as a side dish.

- Put the jam, vinegar, garlic, basil and coriander in a saucepan; cook gently over a low heat until the jam has melted.
- Empty the contents of the can (including the water) into the damson sauce mixture and bring to the boil.
- Cook on a low to medium heat for about 5-8 minutes until the liquid has reduced to a good saucey consistency (not too runny, not too thick!): season with a pinch of salt and good grind of black pepper.

GRANDMA'S RUSHIN' CHICKEN
This is one of my most favourite dishes. (It's really spelled "Russian Chicken", but it's so fast to prepare I call it Rushin' Chicken!) It is so easy to make and it's a family favourite - especially the rice! Serves up to six, although likely, the rice will be leftover for days! Prepare with a salad or steamed vegetables on the side.

- Preheat oven to approximately 350°F.
- In a large glass or metal dish with a lid (about 4-5 inches deep), pour rice, water, onion soup mix, mushrooms and one can of mushroom soup. Mix together with a whisk.
- If desired, cut fat off of chicken cutlets. Place on top of the rice mixture, skin-side down (if using leg quarters).
- Using your hands, cover the chicken pieces with the remaining can of mushroom soup mix. Don't be afraid to cover them in a very thick layer.
- Cover the chicken and place in the oven. After about 30 minutes, turn the chicken pieces over, cover and put back in the oven. Wait 30 more minutes, then uncover and leave in the oven for another 10 - 15 minutes, or longer if you desire crispier chicken.
- Remove from the oven, and place all chicken on a large plate. Using a wooden spoon, mix rice well. Serve hot with vegetables or a salad.
