1 box barilla rotini pasta
4 tablespoons extra virgin olive oil
1/2 lb mussels, steamed
1 garlic clove
3 zucchini, sliced in half moons
to taste black pepper
1/2 lb scallops, diced
1/2 lb shrimp, halved lengthwise
4 tablespoons lemon juice
1 tablespoon parsley, chopped
to taste salt

Steps:

  • Bring a large pot of water to a boil, season the water with salt and cook pasta 1 minute less than the required cooking time. Drain and toss with 1 tablespoon olive oil and place on sheet tray to cool down. In a small pot, steam the mussels until they are opened, remove from shell and discard. Set aside. Meanwhile, in a skillet, sauté garlic in 1 tablespoon olive oil until lightly yellow in color. Add zucchini and sauté for 4 minutes, then season with salt and pepper to taste. In a separate skillet, sauté shrimp and scallops in 1 tablespoon olive oil until lightly golden in colour. Season and set aside to cool down. Once everything has cooled, combine all the seafood with the pasta and zucchini. Toss to combine and add the remaining olive oil, lemon juice and parsley.

3 cups rotini pasta
3 tablespoons butter
1 tablespoon olive oil
3/4 lb raw shrimp, peeled and deveined
2 tablespoons finely chopped shallots
1 garlic clove, minced
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon hot pepper sauce
1/4 teaspoon grated lemon peel
salt and pepper

Steps:

  • Cook rotini according to package directions, drain.
  • Meanwhile, in a large skillet melt butter and oil and sauté the shrimp, shallots and garlic until almost done.
  • Add remaining ingredients and continue cooking until shrimp is tender.
  • Stir in hot cooked rotini until evenly blended.

4 cups veggie rotini or other spiral pasta (about 12 ounces)
VINAIGRETTE:
1/4 cup olive oil
3 tablespoons lemon juice
2 tablespoons balsamic vinegar
1 tablespoon water
3 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons minced fresh oregano or 1 tablespoon dried oregano
SALAD:
3 large tomatoes, seeded and chopped
1 medium sweet red pepper, chopped
1 small cucumber, seeded and chopped
1 small zucchini, chopped
1 small red onion, halved and thinly sliced
1/3 cup sliced pitted Greek olives, optional
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Cook pasta according to package directions. Drain; rinse with cold water and drain well., In a small bowl, whisk oil, lemon juice, vinegar, water, garlic, salt and pepper until blended. Stir in oregano., In a large bowl, combine pasta, vegetables and, if desired, olives. Add vinaigrette and cheese; toss to combine. Refrigerate, covered, until serving.

A really savory dish that can be served hot or cold. A crusty loaf of bread or the sweetness of Challah makes this a delicious main dish!

4 cloves or 1 teaspoon of fresh minced garlic
1/2 cup minced shallot
4 ounces butter
2 tablespoons olive oil
1/3 cup chopped scallion
1 cup white wine (your preference dry or sweet)
3 tablespoons chopped fresh basil
1 teaspoon oregano
2 lbs mussels
1/2 lb shrimp
1 lb scallops

Steps:

  • Melt butter and proceed to saute the garlic and shallots in olive oil until lightly browned.
  • Add scallions to the pot and saute for another 5 minutes.
  • Mix in the basil, oregano and wine and allow the mixture to slowly simmer on low flame for 5 mintues.
  • Add in the mussels, scallops and shrimp and cover. Allow the pot to simmer for 10 minutes until the mussels are open.
  • Serve with the bread to soak up the sauce in a deep bowl and enjoy!

1 onion, finely chopped

1 zucchini, sliced
1/4 cup olive oil
12 cherry tomatoes, cut in half
2 tablespoons parsley or 2 tablespoons basil, chopped
salt
pepper
parmesan cheese

Steps:

  • Cook rotini according to package directions.
  • Saute onion, garlic and zucchini in oil until tender. Add tomatoes and parsley; heat through.
