Old Fashioned Stewed Tomatoes ` Flavors Of Cape Cod image

This is an old recipe from Flavors of Cape Cod cookbook. I remember my mom making this many times and she would bake it with a nice bread crumb topping and just the right amount of spice in it. This is very similar to hers.

Time 20m

Number Of Ingredients 7

4 medium tomatoes, peeled and diced (or canned)
seasonings to taste: basil, oregano, marjoram, parsley, dill, caraway, onion flakes
2 tsp sugar
1/2 tsp salt
pepper to taste
butter to taste
2 slice bread, diced

Steps:

  • 1. Mix all ingredients in saucepan and bring to boil. Simmer for few minutes to meld the flavors. Alternate: pour all ingredients into baking dish and bake for 10 minutes at 350 degrees. Dot the stewed tomatoes with butter just before serving.
  • 2. I like to top the casserole dish with buttered bread crumbs with Parmesan cheese added, yum.
