1/2 cup prepared mayonnaise
1 lemon, zested
2 teaspoons fresh lemon juice
2 anchovy fillets, drained
2 cloves garlic, chopped
3 tablespoons pitted nicoise olives
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons fresh rosemary plus sprigs, for garnish
1/4 cup kosher salt
12 bone-in baby lamb chops, Frenched
2 tablespoons olive oil
Freshly ground black pepper

Steps:

  • Combine the mayonnaise, zest, juice, anchovies and garlic in a food processor and process until smooth. Add the olives and salt and pepper and pulse a few times just to incorporate the olives, not puree them. Cover and refrigerate for at least 30 minutes before serving. Can be made 8 hours in advance and refrigerated.
  • For the lamb chops:
  • Combine the rosemary and salt in a food processor and process until combined.
  • Heat the grill to high.
  • Brush the chops on both sides with oil and season with a few teaspoons of the salt and freshly ground black pepper. Place on the grill and grill until golden brown and slightly charred, 3 to 4 minutes. Flip the chops over and continue grilling to medium-rare doneness, 2 to 3 minutes longer. Let rest 5 minutes before serving. Top each chop with a dollop of the aioli. Garnish with rosemary sprigs.

1/4 cup honey
1/4 cup (packed) golden brown sugar
1 1/2 tablespoons chopped fresh thyme
6 4-inch-diameter portobello mushrooms, stemmed, dark gills removed
3 tablespoons olive oil
3 red onions, sliced (about 6 cups)
2 large red bell peppers
3 tablespoons thinly sliced green onion
3 tablespoons chopped fresh basil
1 garlic clove, minced
1 3 1/2-inch-diameter sourdough or French-bread baguette, cut into 24 slices
Additional olive oil
3 large bunches arugula (about 5 ounces), coarsely chopped

Steps:

  • Preheat oven to 375°F. Mix vinegar, honey, brown sugar and thyme in medium bowl. Transfer 1/2 cup marinade to small bowl; set aside. Place mushrooms in 15x10-inch glass baking dish. Pour remaining marinade over mushrooms. Cover baking dish with foil and bake until mushrooms are tender, about 40 minutes. Transfer mushrooms to work surface; cool. Cut mushrooms into 1/2-inch-wide slices.
  • Heat 2 tablespoons oil in heavy large skillet over medium heat. Add red onions and sauté until very tender and beginning to brown, about 25 minutes. Pour in reserved 1/2 cup marinade and cook until liquid is absorbed and onions are glazed, about 6 minutes. Set onions aside.
  • Char bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel, seed and chop peppers. Place peppers in medium bowl. Add green onion, basil, garlic and 1 tablespoon oil and toss to combine. (Mushrooms, onion mixture and bell pepper mixture can be prepared 1 day ahead. Cover separately and refrigerate.)
  • Preheat oven to 375°F. Place bread slices on baking sheet. Brush bread with additional olive oil. Bake until lightly toasted, about 10 minutes. Layer portobello mushroom slices, arugula, onions and then bell pepper mixture atop bread slices. Bake until heated through, about 3 minutes. Season to taste with salt and pepper. Drizzle bruschetta with Rosemary Aioli. Serve immediately.

This is basically a mayonnaise heavily flavoured with Garlic and rosemary. At our recent Tapas party I served this with recipe #207066. I think it was pretty good. It is also excellent with shrimp or anything that suits garlicky mayonnaise.

Steps:

  • In small bowl, mix aioli ingredients until well blended.
  • Heat 12-inch nonstick skillet over medium-high heat. Add 2 teaspoons oil; tilt skillet to lightly coat bottom. Add shrimp; sprinkle evenly with seafood seasoning. Cook 3 to 5 minutes, stirring frequently, until shrimp are pink.
  • To serve, place shrimp and any cooking juices on serving platter. Arrange sprigs of rosemary and lemon wedges on platter. Serve with aioli and if desired, toothpicks.

6 small onions, each cut into 6 wedges
12 10- to 12-inch metal skewers or bamboo skewers, soaked in water 30 minutes

Steps:

  • Whisk wine, oil, rosemary and garlic to blend in 13 x 9 x 2-inch glass baking dish. Season with salt and pepper. Add lamb and toss to coat with marinade. Let stand at room temperature 2 hours or cover and refrigerate overnight.
  • Prepare barbecue (medium-high heat). Thread lamb alternately with onion wedges onto skewers. Grill lamb kebabs to desired doneness, turning frequently, about 12 minutes for medium-rare. Transfer kebabs to plates. Serve with Tapenade-Rosemary Aioli.

3 garlic cloves, peeled
1 tablespoon chopped fresh rosemary
2/3 cup mayonnaise
3 tablespoons tapenade
2 tablespoons olive oil (preferably extra-virgin)
2 teaspoons balsamic vinegar

1/2 small yellow onion, grated or finely chopped
1 clove garlic, grated or minced

1 Tbsp Worcestershire sauce

ROSEMARY AIOLI
2/3 c light mayo
1 tsp fresh rosemary, finely chopped
1 clove garlic, grated or minced
1-2 tsp red wine vinegar (to taste)
1-2 tsp olive oil, extra virgin (to taste)
1-2 tsp Dijon mustard (to taste)
salt and pepper, to taste
4 pub buns or kaiser rolls
BURGER TOPPING
butter, softened, as needed for buns
sliced tomato
sliced pickles
sliced onion
4 bibb lettuce leaves or lettuce of your choice
4 slices of cheese

Steps:

  • 1. For "Aioli": In a small bowl combine mayo, rosemary, garlic, vinegar, olive oil, Dijon, salt, and pepper. Cover and refrigerate while you prepare the rest of the meal.
  • 2. For burgers: In a medium bowl, combine turkey, onion, garlic, rosemary, Worcestershire, pepper, and salt.
  • 3. Form into 4 patties.
  • 4. Grill over medium-hot coals for about 5 minutes per side. For indoor cooking, preheat a griddle to medium heat and cook about 5 minutes per side.
  • 5. Place a slice of cheese on each patty 3-5 minutes before it's done.
  • 6. Butter the cut side of each bun.
  • 7. Grill until golden about 1-2 minutes, same goes for the indoor preparation.
  • 8. Allow burgers to rest a few minutes before serving. Assemble topping with lettuce, tomato, onions, pickles, and "Aioli." Enjoy!

The steak:
4 teaspoons soy sauce (optional)
2 teaspoon finely minced garlic (optional)
1 teaspoon lemon juice (optional)
1 1/2 pounds skirt steak
Olive oil
Freshly ground black pepper
Kosher salt
The potatoes & aioli:
4 large Yukon gold potatoes, about 2 pounds
4 medium cloves garlic, finely minced
5 tablespoons extra virgin olive oil + more for pan
2 to 2 1/2 generous tablespoons finely chopped rosemary
Kosher salt to taste
Freshly ground pepper to taste
6 tablespoons mayonnaise
1/2 teaspoon lemon juice
1/2 teaspoon sherry vinegar
1/2 teaspoon Worcestershire sauce
1/4 teaspoon finely minced garlic

Steps:

  • For the steak: If using optional marinade, mix soy sauce, garlic and lemon juice together in a small ramekin and spread on both sides of meat. Marinate 1 hour before grilling or refrigerate up to 4 hours and bring meat to room temperature before cooking. Preheat a grill to medium-high. Lightly coat meat with oil then season to taste with pepper and just a touch of kosher salt, as the soy sauce marinade is salty. Grill the meat to desired doneness, about 8-10 minutes total for medium rare; thicker portions may need a little more time. Loosely cover with foil and rest for at least 10 minutes before thinly slicing across the grain. For the potatoes: Preheat oven to 425 degrees. Rinse and dry potatoes. Leaving skin on, cut each potato into wedges about 3/8- to 1/2-inch thick. Place potato wedges in a large bowl and toss with the garlic, olive oil, rosemary and salt to taste. Line a sheet pan with foil; coat the foil lightly with olive oil. Spread wedges on baking sheet; add grinds of pepper to taste. Roast 25-30 minutes or until golden brown and edges are crisp. Taste and adjust seasoning. For the aioli: While the potatoes and meat are cooking, stir together the mayonnaise, lemon juice, vinegar, Worcestershire sauce and garlic in a small bowl. Season to taste with salt and pepper. To serve, divide the steak and potatoes among plates and serve with Worcestershire aioli on the side. Serves 4 Per serving: 735 calories, 39 g protein, 37 g carbohydrate, 48 g fat (11 g saturated), 37 mg cholesterol, 245 mg sodium, 2 g fiber.

2 teaspoons finely chopped fresh rosemary, plus sprigs, for garnish
8 fluid ounces/1 cup (225 milliliters) oil (sunflower, olive oil, or a mixture)
2 egg yolks, preferably free range and organic
Pinch of English mustard or 1/4 teaspoon French mustard
1/4 teaspoon salt
1 dessertspoon white wine vinegar
1 clove garlic, crushed
1 1/2 to 2 ounces (35 to 50 grams) membrillo (quince paste)*
4 racks of lamb or 1 leg of spring lamb
3 sprigs fresh rosemary, optional
1 to 2 cloves garlic, optional
Salt and freshly ground pepper

Steps:

  • I love this recipe, my good friend the Australian cook, Maggie Beer from the Barossa Valley, made this Membrillo Aioli when she stayed at the Cookery School a few years ago.
  • For the aioli: Put the chopped rosemary into a little saucepan with 3 tablespoons of oil and warm gently for 2 or 3 minutes, careful not to burn. Keep aside.
  • Put the egg yolks into a bowl with the mustard, salt, and the white wine vinegar and add the crushed garlic. Put the oil into a measuring cup. Take a whisk in one hand and the oil in the other and drip the oil onto the egg yolks, drop by drop, whisking at the same time. Within a minute you will notice that the mixture is beginning to thicken. When this happens you can add the oil a little faster, but don't get too cheeky or it will suddenly curdle because the egg yolks can only absorb the oil at a certain pace. Taste and add a little more seasoning and vinegar, if necessary.
  • If the mayonnaise curdles it will suddenly become quite thin, and if left sitting the oil will start to float to the top of the sauce. If this happens you can quite easily rectify the situation by putting another egg yolk or 1 to 2 tablespoons plus 1 to 2 teaspoons of boiling water into a clean bowl. Then whisk in the curdled mayonnaise, a half teaspoon at a time, until it emulsifies again.
  • Chop the membrillo and warm gently in a little saucepan until it melts. Cool and add to the mayonnaise with the rosemary and oil. Taste and correct seasoning.
  • For the lamb: Preheat the oven to 425 degrees F/220 degrees C/gas mark 7. Score the skin of the lamb, you may like to insert a few tiny sprigs of rosemary and slivers of garlic here and there on the skin side. Season with salt and freshly ground pepper.
  • Roast for 25 to 30 minutes, depending on the age of the lamb and the degree of doneness required.
  • Allow to rest for 5 to 10 minutes. Carve, allowing 2 to 3 cutlets per person, depending on size. Garnish with a sprig of rosemary and serve with the Rosemary and Membrillo Aioli.

1/3 cup mayonnaise

1/4 cup packed brown sugar
1/4 cup balsamic vinegar
1/4 cup honey

BRUSCHETTA:
6 large portobello mushrooms, stems and gills removed
1/2 cup olive oil, divided
3 medium red onions, halved and thinly sliced
2 large sweet red peppers
3 tablespoons thinly sliced green onions
3 tablespoons minced fresh basil
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
24 slices French bread baguette (1/4-inch thick)
1 cup fresh arugula

Steps:

  • In a small bowl, mix aioli ingredients. Refrigerate, covered, until serving. , Preheat oven to 375°. In a small bowl, whisk marinade ingredients until blended. Place mushrooms in a 13x9-in. baking dish; drizzle with 1/4 cup marinade. Bake, covered, 35-40 minutes or until tender. Remove from baking dish; cool slightly. Cut into 1/2-in. strips., In a large skillet, heat 2 tablespoons oil over medium heat. Add red onions; cook and stir 8-10 minutes or until softened. Reduce heat to medium-low; cook 30-40 minutes or until deep golden brown, stirring occasionally. Add remaining marinade; cook 4-6 minutes or until onions are glazed, stirring occasionally., Place red peppers on a foil-lined baking sheet. Broil 4 in. from heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; let stand, covered, 20 minutes., Peel off and discard charred skin from peppers. Remove stems and seeds. Chop peppers; return to bowl. Add green onions, basil, garlic, salt, pepper and 1 tablespoon oil. Toss to combine., Place baguette slices on ungreased baking sheets; brush with remaining oil. Bake at 375° for 4-6 minutes on each side or until golden brown., To serve, top toasts with mushrooms, arugula, onions and pepper mixture. Bake 5-8 minutes longer or until heated through. Drizzle with aioli.
