Number Of Ingredients 6

1 1/2 pounds small red or white-skinned potatoes (or a mixture)
1/8 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

This is my original recipe that I've been making for years. If you know Potatoes Anna, just think of that, with a wonderful, fragrent twist. Hopefully you have all of the herbs growing in your garden.

Number Of Ingredients 6

1 large red potatoes
2 tablespoons olive oil
1 teaspoon fresh rosemary, chopped
1/2 teaspoon fresh oregano, chopped
1/4 teaspoon fresh thyme, chopped
1/4 cup water

Steps:

  • Wash, then slice your beautiful fresh Red Potato into 1/8 inch slices.
  • Put Olive Oil into a 12-Inch Skillet, and heat over med/high heat.
  • Add potato slices to skillet. Cover and reduce heat to med/low. Sautee potatoes for about 10 minutes, checking constantly to make sure they don't get too brown.
  • After about 10 minutes, when potatoes are brown on bottom layer, turn the whole layer.
  • Brown the underside just a couple of minutes till slightly brown. Add herbs and water.
  • Cover and cook till potatoes are tender.
  • Sometimes I end up with crispy parts, and sometimes I don't, but they are great either way.

4 medium potatoes (1 1/3 pounds)
1 small onion, finely chopped (1/4 cup)
2 tablespoons olive or vegetable oil
2 tablespoons chopped fresh rosemary leaves or 2 teaspoons dried rosemary leaves
1 teaspoon chopped fresh thyme leaves or 1/4 teaspoon dried thyme leaves
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oven to 450°F. Grease jelly roll pan, 15 1/2x10 1/2x1 inch. Cut potatoes into 1-inch chunks.
  • Mix remaining ingredients in large bowl. Add potatoes; toss to coat. Spread potatoes in single layer in pan.
  • Bake uncovered 20 to 25 minutes, turning occasionally, until potatoes are light brown and tender when pierced with fork.

2 1/2 pounds red new potatoes
1 teaspoon dried rosemary
1 tablespoon olive oil

Steps:

  • In a 5-quart pot, bring 1/2 inch water to a boil; add salt and potatoes. Cover; cook, turning occasionally, until tender, about 14 to 16 minutes.
  • With a slotted spoon, transfer potatoes to a bowl. (Reserve pot of water for Steamed Green Beans.
  • Sprinkle potatoes with rosemary and oil. Season with salt and pepper. Break up potatoes with a fork or spoon, tossing to coat; cover to keep warm.
