2 pounds (12 to 15-count) shrimp
1 tablespoon good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup chili sauce (recommended: Heinz)
1/2 cup ketchup
3 tablespoons prepared horseradish
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot sauce (recommended: Tabasco)

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel and devein the shrimp, leaving the tails on. Place them on a sheet pan with the olive oil, salt, and pepper and spread them in 1 layer. Roast for 8 to10 minutes, just until pink and firm and cooked through. Set aside to cool.
  • For the sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Serve as a dip with the shrimp.

1 1/4 cups good mayonnaise, such as Hellmann's
1/2 cup Heinz chili sauce
1/2 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoons bottled grated white horseradish, drained
2 teaspoons Sriracha
1 teaspoon Worcestershire sauce
1/4 cup minced scallions (2 scallions)
2 tablespoons capers, drained

Steps:

  • Preheat the oven to 400 degrees F.
  • Dry the shrimp well with paper towels. Place them on a sheet pan with 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper, toss well, and spread them out in one layer. Roast for 10 minutes, until firm and just cooked through. Set aside to cool.
  • Meanwhile, in a medium bowl, whisk together the mayonnaise, chili sauce, lemon zest, lemon juice, horseradish, Sriracha, Worcestershire sauce, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir in the scallions and capers. Arrange the shrimp on a platter with the sauce in the middle for dipping. Offer a separate bowl for the discarded shrimp tails.

Many renditions of shrimp cocktail are dull and bland, with over-boiled shrimp and cloying cocktail sauce. Not this one. The shrimp are roasted, which brings out their sweetness and allows them to absorb the seasonings and a little olive oil. Though traditionally made with garlic, this aioli replaces it with horseradish. And instead of cocktail sauce, they are paired with a horseradish-laced aioli seasoned with ketchup and hot sauce. If you like an even edgier sauce, feel free to increase the hot sauce and horseradish to taste. The sauce, which can be made up to 3 days ahead, is also terrific on roasted fish.

1 bunch of thin asparagus, trimmed
1/4 plus 1/3 cup ketchup
3 tablespoons prepared horseradish, drained
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
3 tablespoons sour cream
2 tablespoons fresh lemon juice (about 1 lemon), plus lemon wedges for serving
1/4 cup chopped fresh flat-leaf parsley
1 large head iceberg lettuce, cut into 4 wedges

Steps:

  • Preheat the broiler to high with a rack set 3-inches from the heat source.
  • Toss the shrimp and asparagus with 1/4 cup ketchup, 2 tablespoons horseradish, oil, 1/4 teaspoon salt and a few grinds of pepper. Spread out on a rimmed baking sheet in one layer and broil, stirring once or twice, until the shrimp are just cooked through and lightly charred in spots along with the asparagus, about 6 minutes.
  • Stir together the remaining 1/3 cup ketchup, the remaining tablespoon horseradish, the sour cream, lemon juice, and 3 tablespoons water. Stir in half of the parsley.
  • Put an iceberg wedge on each of 4 plates and divide the shrimp and asparagus evenly among them. Drizzle with the dressing and sprinkle with the remaining parsley. Serve with lemon wedges on the side.

2 lbs shrimp, peeled and deveined with the tails kept on (12 - 15 count)
1 shallot, finely chopped
1 lemon, zest of
1 tablespoon lemon juice
1 tablespoon olive oil
seasoning salt, to taste
1 cup peeled and diced mangoes or 1 medium ripe mango
1/2 cup chili sauce
2 teaspoons creamed horseradish
2 teaspoons lime juice
3 drops Worcestershire sauce
3 drops hot sauce (to taste)
2 tablespoons finely chopped parsley

Steps:

  • Preheat the oven to 400°F Place the shrimp on a large baking sheet with sides. In a small bowl, combine the shallot, lemon zest and juice, olive oil and seasoning salt, and mix to combine. Pour over the shrimp and move them around to evenly coat. Make sure the shrimp are arranged in one layer.
  • Roast the shrimp for about 8 to 9 minutes, or until they are pink and opaque all the way through. Place in another dish and cool. Refrigerate until serving.
  • While the shrimp are cooking, prepare the sauce: In a food processor puree the mango. Combine the remaining ingredients together in the food processor and blend until combined. Taste for seasoning. Place in a small serving bowl and serve with shrimp or crab.
  • To serve as an appetizer: place the sauce in a small bowl in the center of a 12-inch platter. Arrange the shrimp around the outside of the platter in a pretty pattern. Garnish with the parsley. Make sure to have a small bowl next to the platter to dispose of the tails.
  • To serve as a first course: Place a couple of tablespoons of the sauce in the center of a martini glass. Sprinkle the parsley on top of the sauce. Arrange the shrimp on the edge of the glass; figure 4 to 5 shrimp per person. Serve immediately.
  • Advance Preparation: The shrimp and sauce can be made up to 1 day ahead, covered and refrigerated.

2 pounds large shrimp (16 to 20 count), peeled and deveined
4 cloves garlic, minced
Salt and freshly ground black pepper
2 tablespoons olive oil
3 tablespoons butter
1/2 large sweet onion, diced (about 3/4 cup)
2 tablespoons coriander seed, toasted and ground
1 teaspoon minced fresh thyme or 1/2 teaspoon dried
2 cups canned whole plum tomatoes, pulsed in a food processor to puree
1 bay leaf
Zest of 1/2 lemon
2 tablespoons lemon juice
3 to 4 tablespoons hot prepared horseradish (not creamed) or freshly grated horseradish
4 shakes (about 1/8 teaspoon) cayenne
4 teaspoons sugar
2 heads bibb lettuce, small and medium leaves only

Steps:

  • Blot the shrimp dry and place in a medium bowl along with the garlic, a pinch of salt, 1/2 teaspoon black pepper and the olive oil. Refrigerate for a minimum of 2 hours and up to 8 hours.
  • For the sauce: Heat the butter in a large nonreactive skillet. Add the onion and 1/4 teaspoon salt and cook over medium heat, stirring often, until coppery brown, 10 to 15 minutes. Add the ground coriander and the thyme, and stir to combine. Add the pureed tomatoes, 1/4 teaspoon black pepper, the bay leaf and the lemon zest. Cook, uncovered, over medium-low heat until the sauce thickens, 10 to 15 minutes. Add the lemon juice, horseradish, cayenne and sugar, and taste for seasoning. Pour the sauce into a small bowl and let cool to room temperature before serving. (You can make the cocktail sauce up to 3 days ahead and keep refrigerated.)
  • For the shrimp: Preheat the oven to 425 degrees F. When hot, place a heavy sheet pan in the oven to preheat for a couple of minutes.
  • Add the marinated shrimp to the hot pan in a single, well-spaced layer. Roast the shrimp until curled into a "C" shape and pearly-white throughout, about 10 minutes.
  • To serve: Arrange the lettuce leaves and the shrimp on separate platters, with the cocktail sauce on the side. Have guests assemble their own wraps: one shrimp per lettuce leaf, with a healthy dollop of cocktail sauce on top.

Love my lime with cilantra, and my favorite dish at the restuarant my daughter works at is the tequilla lime shrimp, its served over angle hair pasta. so i took a basic shrimp cocktail recipe and added some of the ingredients from this dish. DELISH and a different twist to the usual shrimp cocktail.

1 1/2 tablespoon(s) tequila
- cilantra
2 - limes
1 teaspoon(s) adobo seasoning
1/8 teaspoon(s) cumin

1 cup(s) chili sauce

Steps:

  • Peel and devain shrimp leaving tails on. Drizzel with olive oil, adoba (or s&p) and cumin mix and put on sheet pan and roast at 400 for 8-10min. Set aside to cool. When cooled squeese lime juice over shrimp.
  • Sauce is cup chili sauce, 1 1/2 tbls tequila, juice of lime, 1/2tsp each worsc and cumin, 1-2tbls horseradish, and 2 tbls finely chopped cilantra. Mix and place in serving cups with wedge of lime.

2 cloves garlic, finely chopped (about 1 Tablespoon)

1/4 teaspoon cracked balck pepper
Cocktail Sauce (see recipe for Cocktail Sauce with Red Onion and Jalapeno)

Steps:

  • Heat the oven to 450. Devein the shrimp, if necessary. In a large bowl, toss the shrimp with the garlic, olive oil, salt and pepper. Spread the shrimp on a heavy-duty rimmed baking sheet in a single layer. Roast for 3 minutes, turn the shrimp over with tongs, and continue roasting until the shrimp are opaque and firm, another 2 to 4 miutes. Transfer the shrimp to a shallow dish, cover loosely and refrigerate. When the shrimp are thoroughly chilled (after about 2 hours), seve them with the cocktail sauce.
