Steps:
- Beurre Blanc: Combine the shallots, lemon juice, wine, thyme, peppercorns, bay leaves, and roasted garlic in a small sauce pot. Bring to a boil and reduce until almost dry, leaving about 1/8 cup. Reduce heat to low and add the cream. Begin adding the butter, 1 cube at a time, whisking continuously. As each cube incorporates into the sauce, add another until all butter has been added. Strain through a fine mesh strainer. Taste and adjust the seasoning with salt and pepper. If you feel that the sauce is too acidic, add a bit of honey to balance the flavor. Be sure to use only a small amount of honey so as not to make the sauce taste too sweet. Cover and keep warm until ready to serve.
- Mushrooms: Place a saute pan over high heat and add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you just begin to see light wisps of smoke coming from the pan. Add the mushrooms and begin to saute until the mushrooms are cooked halfway. Add the garlic and shallots to the pan and continue to saute, keeping the mushrooms moving at all times. When the mushrooms are just cooked through add the fresh herbs to the pan and season with salt and pepper, to taste. Taste the mushrooms and adjust the seasoning, if necessary. Cover and keep warm while you saute the scallops.
- Scallops: In a bowl, toss the sea scallops lightly in 1/2 cup canola oil. Season each scallop evenly on both sides with salt and pepper. Put a saute pan that is large enough to hold the scallops in 1 layer without them touching over high heat. Add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you begin to see light wisps of smoke coming from the oil. Add the scallops to the pan carefully and allow them to get a deep golden brown color. Turn the scallops and allow the second side to get the same golden brown color. If you want the scallops to be more cooked, place the scallops in a preheated 350 degree F oven until they reach the desired doneness. Serve with mushrooms and drizzle with buerre blanc sauce.

- Preheat the broiler or prepare a charcoal grill.
- Place the peppers under the broiler or on the grill. Cook them on all sides until the skin is well charred. When cool enough to handle, split the peppers in half, core them and discard the charred skin and the seeds. Rinse in cold water. Pat dry with papers towels and cut them into 1/2-inch cubes.
- Remove and discard the ends of the snap peas.
- Heat the olive oil in a large nonstick skillet and add the peas, cook and stir over medium heat for 2 minutes. Add the scallops, the red peppers, shallots, garlic, thyme, pepper flakes, liqueur, butter, lemon juice, salt and pepper to taste. - Preheat a charcoal grill to high heat using the direct heat method.
- Thread 2 skewers through 3 scallops sideways so the scallops lie flat. Make 4 sets. Brush the scallops with oil and sprinkle with salt and pepper. Grill the scallops on both sides until slightly charred and just cooked through, about 1 1/2 minutes per side. Serve with Cracked Wheat Salad, Roasted Red Pepper Tahini Vinaigrette and grilled lemons.
- Bring 2 cups salted water to a boil, add the cracked wheat, cover and cook until the wheat is tender and the water is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 5 minutes, then fluff with a fork.
- Transfer the cracked wheat to a bowl. Add the dill, parsley, mint, cucumber, tomatoes, lemon juice and drizzle with olive oil. Season with salt and pepper and toss to combine.
- Steep the saffron in hot water for 5 minutes to bloom. Transfer the saffron to a blender and add the tahini, vinegar, 1 tablespoon harissa, honey, garlic, red peppers, lemon juice, and season with salt and pepper. Blend until smooth. Taste, and add more harissa if desired.
- With the motor running, slowly drizzle in the oils and blend until emulsified. The vinaigrette can be made up to 4 hours in advance, covered and kept refrigerated. Bring to room temperature before serving.

THYME ROASTED SEA SCALLOPS, SWEET CORN RISOTTO, WITH PARSLEY TRUFFLE EMULSION

- Risotto: Preheat a wide saucepan then add the olive oil to coat the bottom of the pan. Add the shallots, garlic, bay leaf, and thyme, and cook until translucent.
- Add the arborio rice and stir frequently to coat with the oil. Deglaze with the white wine and keep stirring, you will need to stir throughout this whole recipe.
- When the rice has absorbed the wine, add the hot corn stock in three equal amounts and keep the rice at a constant boil while stirring. After the addition of the third equal amount add the corn and cream, when the liquid is absorbed and the rice is cooked, adjust seasonings with salt and pepper, then fold in the parmesan and butter, and remove from heat.
- Sauce: Place the vegetable stock and the parsley in a bar blender and puree until smooth and bright green, then strain through a fine mesh strainer. Combine the liquid and the truffles in a small saucepot and bring almost to a boil. Whisk the butter and adjust with salt and pepper, then set aside.
- Scallops: Preheat a skillet and cover with olive oil, add the seasoned scallops to the pan and saute on both sides for about 5 minutes, while cooking the scallops, add the butter and thyme to the skillet, and baste the scallop while cooking.
- Place equal amounts of risotto in the center of 4 plates and top each with 3 scallops. Lightly cover the scallops with the parsley sauce.

- Peel and remove seeds and ribs (don't do this under running water, you want all the flavor).

ROASTED SEA SCALLOPS WITH POTATO GNOCCHI, PEAS AND MUSHROOMS
this is a cheap version of a restaurant dish from some place called Great Bay. The original dish calls for english peas and morel mushrooms but hey you buy what you can get cheap right! The dish is somewhat time consuming so you don't want it on a busy night. And this recipe seems to only make enough for 1 large serving or 2 smaller appetizer servings.

- Gnocchi:.
- Bake the russet potato in a 350F oven until fully cooked (about 35-40 minutes).
- Remove the peel from the potato and put the flesh through a food mill while still warm.or use a ricer, use someting to make sure all potatoe is broken up and there are no lumps left. you could even use the back of a large spoon, push potato through a pasta colander.
- While the potato is still warm, place it into a mixing bowl with the eggs and melted butter; season with salt and pepper.
- Spoon the potato mixture onto a cutting board dusted with flour.
- Use your hands to knead the mixture, while adding more flour a small amount at a time. Add flour until the mixture in moist but not sticky.
- Gently roll the dough into a long cylinder until in has the diameter of a nickel.
- Cut the dough into 1-inch pieces with a butter knife.
- Pinch the uncut side and place on a floured pan.
- They should resemble a pillow in shape.
- Cook the gnocchi in simmering salted water until they begin to float.
- Gently transfer to ice water for two minutes.
- Remove from the ice water and coat with the olive oil.
- Gnocchi should be refrigerated until needed.
- Sauce:.
- Begin by shucking the peas and blanching them in boiling water for about 45 seconds. (Salted water should always be used when blanching vegetables.)
- The peas should be soft but not mushy.
- After the peas have blanched, transfer directly into ice water, and remove from the water when cool.
- Place all of the cooked peas, with the exception of 1/4 cup, into a blender with the cold water, and puree; season with salt and pepper.
- The finished product should have the consistency of heavy cream.
- Hold cold until needed.
- Mushrooms:.
- In a medium sauté pan, melt 1 tablespoons of the butter.
- When the butter is fully melted, add the mushrooms and season with salt and pepper.
- Cook until they begin to turn light brown.
- Remove from the pan and cool on a paper towel.
- Cooking and presentation:.
- Put the whole peas, gnocchi and mushrooms with into a small sauté pan with 1 tablespoon of butter and gently warm.
- Warm the pea puree in a saucepan over a low heat.
- Meanwhile, heat a small sauté pan with the canola oil until it begins to smoke very lightly.
- Season the scallops with salt and pepper and place in the pan.
- When the scallops start to brown, turn the heat to medium-low and continue to cook for 3 minutes; flip over and cook for an additional minute. Squeeze fresh lemon juice over the scallops and remove from the pan. Ladle a small spoonful of sauce into the middle of shallow bowl.
- Randomly place the peas, gnocchi and morels in the bowl.
- Carefully place the scallops in the bowl, and serve immediately.

- Place shallot, garlic, white wine and saffron in a small saucepan and reduce by 3/4. Place the mixture into a blender, add the vinegar, mustard and honey and blend until smooth. - To prepare the scallops:
- Place half of shredded potato on a 6x6 piece of parchment paper. Season with salt and pepper. Sprinkle half of the chives and half of the flour on the potato. Place one scallop in center of the potato, then cover scallop with other half of potato, remaining chives, flour and re-season with salt and pepper. Repeat with remaining four scallops.
- In a hot pan, add oil. Lift potato and scallop off parchment paper with spatula and cook in a pan until potato is golden, about five minutes. Flip over and continue to cook another five or ten minutes or until other side is golden. Place on warm serving dish.
- To prepare the caviar-sabayon sauce:
- In a double boiler, mix egg yolk, vinegar, champagne, and salt and pepper. Quickly whisk until volume increases and becomes foamy (about 1 minute). Take off heat. Fold in caviar without breaking eggs.

- In a small saucepan over medium-high heat, combine the pistou and stock. Bring to a boil. Season with salt and pepper. Reduce heat to very low, and keep warm.
- Spread the rice flakes on a small plate; set aside. Place the flour on a second small plate; set aside. In a small bowl, combine the eggs and a pinch each of salt and pepper. Whisk to combine. Season scallops with salt and pepper. Dip one side of each scallop into the flour, then the egg mixture, and then into the rice flakes to coat; set aside.
- In a medium nonstick skillet over medium heat, heat the oil. Add the scallops, rice flake side down, and cook for 2 minutes. Add the butter, and continue to cook until golden brown, about 2 minutes more. Be careful not to burn the rice flakes. Turn, and cook until just opaque, about 2 minutes more.
- Divide the fricassee between 4 shallow soup bowls. Place scallops on top. Drizzle pistou sauce around the vegetables; serve immediately.

- Pre-Heat oven to 450°F and place oven rack in middle.
- Coat pumpkin cavity with Maple Syrup using a pastry brush. Place on a sheet pan and roast for 1-hour at 375°F.
- Baste pumpkin every 15-minutes.
- Remove pumpkin flesh from shell and place into a bowl.
- In a 5-quart soup pot melt 2-tablespoons butter, add bay leaves, Maui onion, carrots, garlic, 1/4 teaspoon salt, 1/4 teaspoon pepper and Saute' 4-5 minutes.
- Add 1/4 cup white wine and reduce by half.
- Add chicken stock, roasted pumpkin and slowly bring to a full boil stirring. Reduce to a simmer for 20-minutes uncovered.
- Wisk in cream, allspice, mace, pumpkin pie spice, nutmeg, tabasco sauce and bring to a full boil for for 10-minutes. Stir to prevent from burning.
- Reduce to a simmer for 30-minutes and stir several times.
- Remove from heat, discard bay leaves and puree the bisque.
- Season Alaskan Scallops with old bay seasoning, cajun seasoning, cayeene pepper, salt and white pepper.
- Add butter to a hot saute pan and saute scallops 2-3 minutes; turning scallops only once. Remove and hold warm for service.
- Season bisque with salt and pepper to taste.
- Serve bisque in hot bowls with Blackened Alaskan Sea Scallops.
- Garnish Pumpkin Bisque with Fresh Chopped Parsley.
LULU'S PAN ROASTED SEA SCALLOPS

- For Limonata Sauce: Whisk all ingredients together Make limonata a head and refrigerate. To Prepare Quinoa: Reconstitute dried porcini mushrooms with 1/2c. hot water. Set aside for 10 minutes. Strain off water. Reserve. Chop porcini mushrooms. Set aside. Rinse quinoa until water runs clear. Place in medium saucepan: Bring 2 c. water, 2 c. shrimp stock & 1/4c.white wine to a boil. Season lightly with salt. Add quinoa. Cook for about 10minutes. Add chopped porcini mushrooms and the reserved porcini water to quinoa. Continue to cook quinoa for about 10 minutes more until tender. Keep warm. Prepare Scallops: Season with salt and pepper. Sear scallops on both sides. Place in 400 degree oven for about 4 minutes. Saute diced parsnips. Season with salt. Add remaining cup of shrimp stock to parsnips. Add quinoa and frisee to pan. Add cold butter. Stir to blend in butter and heat the quinoa. Add Thai fish sauce and 1 Tbsp limonata. Add chives.(reserve a few for garnish) Divide quinoa among 4 plates. Place scallops on top of quinoa. Dress each scallop with a splash of limonata . ROASTED SEA SCALLOPS WITH MUSHROOMS, BLACK GARLIC AND CHICKPEAS
Steps:
- For the aioli: Peel the garlic and place in blender with vinegar and puree until smooth. Fold into mayonnaise and refrigerate until needed. For the mushrooms: In a sauté pan over medium, heat 4 tablespoons of vegetable oil until it slides easily over the surface of the pan. Add the mushrooms and cook 3-4 minutes until they begin to soften and caramelize around the edges. Add the shallot, thyme, and butter and season with salt and pepper to taste. Keep warm until needed. For the chickpeas: Heat a sauté pan. When hot, add the oil and chickpeas and quickly cook them until they begin to crisp. Remove from heat and add Old Bay seasoning. Keep warm. For the scallops: Season the scallops with salt. Heat a sauté pan large enough to comfortably fit all the scallops. Add the oil and when it slides easily in the pan, add the scallops and let caramelize. When you can begin to see the bottom browning, add the butter and flip. Let the other side cook 2-3 minutes longer To assemble: Paint a swath of black garlic mayonnaise on long plate. Put two drops of porcini glaze to right of garlic. Place two scallops on wide end of garlic swath. Scatter mushrooms and chickpeas on plate. Top with micro greens or celery leaves and serve immediately.
GRILLED JUMBO SEA SCALLOPS WITH ROASTED CORN AND PEACH SALAD

- For the oil: In a blender, add the olive oil and cilantro and puree until smooth. Hold until ready to use. For the salad: Bring a pot of water to a boil, adding a teaspoon of salt. Shuck the corn, removing all of the husk and silk. Place in the boiling water for one minute. Remove from the water and place on a platter. Drizzle with a small amount of extra virgin olive oil and season lightly. Place the corn on a hot charcoal or gas grill, roasting the corn until parts are golden brown. In a bowl, add the peaches, red onion, cilantro, cumin, honey, lime juice and zest and olive oil. When the corn has cooled, using a sharp knife, cut the corn from the cob. Add to the peach mixture. Season to taste with salt and pepper, and chill. Soak the bamboo skewers in water for 1 hour before use. Holding two skewers side by side, push the scallops on to the skewers. Brush the scallops with olive oil and refrigerate until ready to grill. When ready, remove from the refrigerator for 5 minutes before cooking. Season with salt and pepper just before putting on the hot grill. Cook on one side for about 3 to 4 minutes before making sure there is nice color on the first side. Turn the scallops over and cook for about 1 minute longer. To assemble: Place about ½ cup of arugula on each plate to one side. Stir the corn and peach salad, and spoon the servings on to each plate. Take the skewer, holding over the salad and pull the skewers from the scallops placing them on the plate. Drizzle the cilantro oil around the plate. Place a lime half and tomatoes on the plate, and serve immediately.

Steps:
- To Prepare Quinoa:.
- Reconstitute dried porcini mushrooms with 1/2c. hot water.
- Set aside for 10 minutes. Strain off water. Reserve.
- Chop porcini mushrooms. Set aside.
- Rinse quinoa until water runs clear.
- Place in medium saucepan:.
- Bring 2 cups water, 2 cups shrimp stock & 1/4c.white wine to a boil.
- Season lightly with salt.
- Add quinoa.
- Cook for about 10minutes.
- Add chopped porcini mushrooms and the reserved porcini water to quinoa.
- Continue to cook quinoa for about 10 minutes more until tender. Keep warm.
- Prepare Scallops:.
- Season with salt and pepper.
- Sear scallops on both sides.
- Place in 400 degree oven for about 4 minutes.
- Saute diced parsnips. Season with salt.
- Add remaining cup of shrimp stock to parsnips.
- Add quinoa and frisee to pan.
- Add cold butter. Stir to blend in butter and heat the quinoa.
- Add Thai fish sauce and 1 Tbsp limonata.
- Add chives.(reserve a few for garnish).
- Divide quinoa among 4 plates.
- Place scallops on top of quinoa.
- Dress each scallop with a splash of limonata .
- Garnish with chives.

ROASTED CAULIFLOWER SOUP WITH SEA SCALLOPS AND CAVIAR

- Thaw scallops, if frozen. Pat dry with paper towels; cover and chill until serving time. Preheat oven to 375°F. Place cauliflower on 15x10x1-inch baking sheet. Drizzle with 2 tablespoons oil; sprinkle with salt and white pepper. Toss to coat. Roast, uncovered, 30 minutes or until tender and just beginning to brown. In large saucepan, heat 2 more tablespoons oil over medium heat. Add onion, leek, and garlic to saucepan. Cook and stir 10 minutes or until soft. Add roasted cauliflower, broth, and cream to saucepan. Bring to boil; reduce heat and simmer, covered, 10 minutes. Cool slightly. With immersion blender, blend soup until smooth, or transfer to blender or food processor, half at a time, and blend or process until smooth. Return soup to saucepan. Season to taste with salt and pepper. Heat through. Add additional broth to reach desired consistency.In large skillet, heat remaining 1 tablespoon oil over medium-high heat. Sprinkle scallops with salt and pepper. Cook scallops in hot oil for 2 to 3 minutes or until brown and just opaque in center, turning once halfway through cooking time. Place one scallop in each serving bowl. Spoon soup around scallop. Garnish soup with caviar and Pecorino cheese. Drizzle with truffle oil. Makes 6 to 8 servings.
