1 cup pumpkin, Mashed, Canned
3 large eggs
1/2 cup brown sugar, Firmly Packed
1/2 cup heavy cream
3/4 teaspoon cinnamon, Ground
1 cup mincemeat, Prepared
3/4 teaspoon nutmeg, Ground
1 unbaked 9-inch pie shell
1/2 teaspoon salt

Steps:

  • Combine the pumpkin, brown sugar, cinnamon, nutmeg and salt in a bowl, mixing well.
  • Add the eggs and heavy cream.
  • Beat until smooth using a rotary or electric mixer.
  • Stir in the mincemeat and pour into the unbaked pie shell.
  • Bake in a preheated 425 degree F. oven for 35 minutes or until the filling is set.
  • Cool slightly on a wire rack and serve warm.

This is pumpkin pie with a twist, a layer of mincemeat topped with a layer of pumpkin. Just the thing to put the zing into traditional pumpkin pie! It has been a favorite in our family for years.

1 ½ cups prepared, meatless mincemeat
1 egg, beaten
1 cup pumpkin puree
½ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 prepared 8 inch pastry shell
1 cup whipped cream

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Beat together egg, pumpkin, sugar, spices, and salt with rotary beater.
  • Spread mincemeat into the bottom of the pastry shell. Pour pumpkin mixture over mincemeat.
  • Bake for 35 to 40 minutes. Serve with whipped cream, slightly warm or cool, but not cold.

1 1/2 cups canned mincemeat
1 unbaked 9-inch pie shell
1 (18 ounce) can pumpkin pie filling
1/4 cup orange juice
1 cup evaporated milk
1/2 teaspoon grated orange peel
whipped cream

Steps:

  • Spread mincemeat evenly in bottom of pastry shell.
  • Prepare pumpkin pie filling, following label directions, but substitute the orangejuice and evaporated milk for the liquid called for; stir in peel.
  • Pour over mincemeat in shell.
  • Bake in a hot oven 400* for about 45 minutes or till knife inserted halfway between center and edge of filling comes out clean.
  • Cool, serve garnished with whipped cream.

Instead of serving separate pumpkin and mincemeat pies one Thanksgiving, I served this one pie that combines those wonderful flavors. It was a hit!

2 cups prepared mincemeat
1 unbaked pastry shell (9 inches)
1 large egg
1 cup canned pumpkin
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon ground cloves
3/4 cup evaporated milk

Steps:

  • Spread mincemeat over the bottom of pastry shell. In a large bowl, beat the egg, pumpkin, sugar, cinnamon, ginger, nutmeg, salt and cloves just until smooth. Gradually stir in milk. , Pour over mincemeat. Bake at 400° for 55-60 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack. Store in the refrigerator.
