Crispy and flavorful on the outside, soft and delicious on the inside, these herb and garlic roasted red potatoes are an easy side dish you're sure to love.

2 pounds small red potatoes (cut in half)
2-3 tablespoons olive oil
4 large garlic cloves (minced )
1 teaspoon dried dill
1 teaspoon dried parsley
1 tablespoon flaked sea salt
1/2 teaspoon black pepper

Steps:

  • Preheat your oven to 400°. Get out a large rimmed baking sheet.
  • In a large bowl place the potatoes, olive oil, garlic, dill, parsley, salt and pepper. Toss until the potatoes are coated in the spices and olive oil.
  • Place the potatoes onto the baking sheet, ensuring that they are in one layer.
  • Roast the potatoes in the oven for 20 minutes, then flip to brown the other side. Continue roasting, flipping every 15 minutes until the potatoes are crisp on the outside and cooked through.
  • Remove from the oven and serve hot.

6 large shallots, peeled and halved lengthwise
3 tablespoons extra-virgin olive oil, divided
1 1/2 pounds medium Yukon Gold potatoes, peeled and quartered

Steps:

  • Preheat oven to 400°F with rack in lowest position.
  • Toss shallots with 1 1/2 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a 13-by 9-inch baking pan, spreading evenly.
  • Roast, stirring occasionally, until shallots are golden, about 30 minutes.
  • Toss potatoes with remaining 1 1/2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl, then add to shallots.
  • Roast, turning occasionally, until vegetables are tender and potatoes are crusty, 40 to 50 minutes.

1 1/2 pounds red-skinned potatoes
1 medium onion
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1/2 teaspoon dried or fresh dill weed , chopped
1/2 to 1 teaspoon fresh or freeze-dried basil, chopped
1 to 2 teaspoons fresh or freeze-dried parsley, chopped
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper

Steps:

  • Gather the ingredients.
  • Preheat oven to 400 F. Oil a shallow baking pan .
  • Scrub the potatoes. Peel the potatoes, if desired, or leave them unpeeled. Cut them into halves (for small potatoes) or wedges of equal sizes.
  • Peel the onion and trim the ends. Cut it into 6 to 8 wedges.
  • In a small cup, melt the butter with the olive oil in the microwave.
  • In a large bowl, combine the potato wedges, onion wedges, melted butter and oil, dill weed, basil, parsley, salt, and pepper. Toss to combine and coat potatoes.
  • Transfer potatoes and onions to the prepared pan.
  • Roast for about 30 to 40 minutes, turning occasionally until potatoes are tender and golden brown.
  • Transfer the potatoes to a serving dish. Serve hot and enjoy.

2 sprigs fresh rosemary
2 to 3 sprigs fresh sage
3 sprigs fresh thyme
6 cloves garlic, left unpeeled
3 tablespoons extra-virgin olive oil, plus for sheet pan

Steps:

  • Preheat oven to 500 degrees F and place a baking sheet inside to heat.
  • Add potatoes, rosemary, sage, thyme, and garlic to a medium bowl. Drizzle with olive oil, and season with salt and pepper. Remove sheet pan from oven, lightly coat with olive oil, and pour potatoes onto pan. Place potatoes in oven and reduce heat to 425 degrees F. 6 whole garlic cloves, peeled
4 medium shallots, peeled and halved with the root in tact
3 small sprigs rosemary
3 small sprigs thyme
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Preheat oven to 375 degrees F.
  • Melt the butter with the olive oil in a large roasting pan. Toss all of the ingredients in the butter/oil mixture to coat evenly.

1/4 cup olive oil (more or less to taste and diet)
1 sprig rosemary
3 leaves fresh sage

  • Preheat oven to 425°F.
  • Combine squash, potatoes shallots and garlic in large shallow baking pan.
  • Drizzle with oil.
  • Salt and pepper to taste.
  • Top with herbs.
  • Bake 45-50 minutes, turning once after vegetables are browned on one side.
  • The skins of the potatoes and squash have lots of fiber and vitamins so I leave them on you can remove them if you want.
  • Season with salt and pepper if desired.

6 tablespoons chopped fresh parsley, divided
4 teaspoons chopped fresh thyme

Steps:

  • Add potatoes to large pot of boiling salted water. Cook 6 minutes and drain. Toss potatoes with shallots, oil, salt, and pepper in large bowl to coat. (Can be prepared 1 day ahead. Cool slightly, then cover and refrigerate.)
  • Preheat oven to 400°F. Lightly oil 2 rimmed baking sheets. Divide potatoes between prepared baking sheets. Roast 35 minutes. Sprinkle 2 tablespoons parsley and 2 teaspoons thyme over potatoes on each sheet. Using metal spatula, turn potatoes to coat. Roast until brown and tender, about 20 minutes longer. Transfer to serving bowl, sprinkle with remaining 2 tablespoons parsley, and serve.
