1 (5-pound) pork shoulder, bone-in, untrimmed and not tied
Salt
Freshly ground black pepper
1 cup Creole seasoning
1/2 cup olive oil

Steps:

  • Preheat the oven to 400 degrees F. Season all sides of the pork with salt and pepper. Combine the Creole seasoning and olive oil in a small bowl to make a paste. Rub the paste all over the pork. Place the pork, fat side up on a rack in a roasting pan. Roast the pork for 30 minutes. Reduce the heat to 250 degrees F and continue to cook for 6 1/2 hours. Remove from the oven and cool completely. Remove the meat from the pan and using two forks, shred all of the meat.

One 4-to-6 pound bone-in pork butt
2 tablespoons light brown sugar
1 tablespoon ground ginger
1 tablespoon paprika
1 tablespoon freshly cracked black pepper
1 tablespoon kosher salt
6 cloves of garlic, minced
One 12-ounce can of your favorite beer
1/2 cup orange juice
8 to 10 brioche buns

Steps:

  • Preheat the oven to 275 degrees F.
  • Place the pork shoulder on a cutting board or baking sheet. Whisk together the brown sugar, ginger, paprika, black pepper, salt and garlic in a small bowl. Rub the spice mixture all over the pork butt.
  • Pour the beer and orange juice into a large Dutch oven and add the pork. Cook, uncovered, basting with any juices that accumulate in the pan, until the pork reaches an internal temperature of 200 degrees F and shreds easily, 6 to 7 hours. Let the pork rest for 10 to 15 minutes, then shred. Serve on brioche buns.

New Year's Day here in the south means PORK! And it needs to be truely melt in your mouth pork! It was nasty outside so we didn't want to try using a smoker, but wanted smoky delicious pork. Don't be afraid of the amount of smoky paprika in the rub! It really works! I had the roast in the refrigerator about 16 hours before...

10-12 lb pork butt/shoulder
2-1/2 Tbsp sea salt''
3 Tbsp garlic powder
5 Tbsp dark brown sugar
2 Tbsp ground mustard
3/4 c smoked paprika
1 Tbsp mrs. dash onion & herb seasoning
1 large onion, thickly sliced
2-3 large stalks celery
18 oz your favorite barbecue sauce

Steps:

  • 1. Combine all your spices, set aside. Trim excess fat from the pork leaving a nice layer on the top of the roast for self basting while in the oven.
  • 2. Rub your spice blend all over the roast; cover with saran wrap and refrigerate overnight, or at least 12 hours.
  • 3. Slice onion into thick slices and put in the bottom of your pan, along with stalks (including leaves) of celery.
  • 4. Place in preheated 325 degree oven and cover roaster with lid, or with aluminum foil.
  • 5. Roast for 8 to 9 hours. Check for doneness with meat thermometer. When pork reached 200 degrees I basted with barbecue sauce and returned to oven without lid for about 30 more minutes (or until you have a nice browned finish on the roast.)
  • 6. You can serve slices at this point, or shred the pork to get pulled pork. Add sauce of your choice and enjoy in slices or on buns.

3 tablespoons minced garlic
3 tablespoons roughly chopped fresh sage
3 tablespoons kosher salt
3 tablespoons freshly cracked black pepper
one 5-6 pound pork shoulder roast
1 small pineapple, peeled, cored and cut into 2-inch cubes
3 red onions, peeled and quartered
FOR THE SAUCE
2 cups pineapple juice
1/4 cup red wine vinegar
1/2 cup grainy mustard
kosher salt and freshly cracked black pepper, to taste

Steps:

  • Preheat oven to 500. In a small bowl, combine the garlic, sage, salt and pepper and mix well. Dry the pork butt with paper towels. With the tip of a sharp knife, make 10 to 12 small cuts, about 1/2 inch long and 1/2 inch deep, evenly spaced over the surface of the pork and push some of the spice rub into each slit. If you have any left over, rub it over the surface of the pork. Place the pork on a rack in a roasting pan, and roast for 20 minutes to brown it. Reduce the temperature to 300, add the pineapple and onions to the roasting pan, and continue to cook until the pork is done to your liking, 1 hour to 1 hour and 10 minutes for medium well. To check for doneness, insert a meat thermometer into the dead center of the roast and let it sit for 5 seconds. 126 degrees is medium-rare, 134 is medium, 150 is medium well; we like to pull it at 147. When the roast is done, remove it from teh pan, along with the pineapple and onions, loosely cover with foil, and allow the meat to rest for about 20 minutes while you make the sauce. Pour off the fat from the roasting pan and place the pan on the stove over two burners at a medium-high heat. Add the pineapple juice and vinegar and bring to a simmer, stirring to dissolve the brown, crusty stuff in the bottom of the pan. Continue to simmer until the liquid is reduced by half, about 5 to 7 minutes. Stir in the mustard, season with salt and pepper, and pour into a sauce boat. Slice the roast and serve with the pineapple and onions, passing the sauce separately.

2 Tbsp. HEINZ Yellow Mustard
1 boneless pork shoulder (4 lb.)
1/4 cup packed brown sugar
2 tsp. paprika
1 tsp. garlic powder
1 tsp. kosher salt
1 tsp. black pepper
1/2 cup HEINZ BBQ Sauce Carolina Mustard Style, divided

Steps:

  • Heat oven to 250°F.
  • Line roasting pan with foil; spray with cooking spray. Rub mustard evenly onto meat. Mix sugar and dry seasonings until blended; sprinkle over meat, then rub into mustard. Place in prepared pan; cover tightly with foil.
  • Roast meat 5 hours. Remove meat from pan; drain and discard liquid from pan. Return meat to pan. Reserve 1/4 cup barbecue sauce for later use; brush meat with remaining barbecue sauce.
  • Increase oven temperature to 350°F. Roast meat, covered, 1-1/2 hours or until meat is done (160°F) and very tender. Remove from oven. Let stand 15 min.
  • Pull meat into shreds with 2 forks. Serve topped with reserved barbecue sauce.

SPICE BLEND FOR MEATS( BEEF/PORK 0R CHICKEN)
1/4 c granulated garlic (good quality)
3 Tbsp smoked paprika
3 Tbsp steak seasoning
2 Tbsp granulated onion spice
2 Tbsp ground cumin, heaping full
1 Tbsp red pepper flakes
CITRUS FRUIT& OTHER INGREDIENTS FOR THE ROAST
2 medium navel oranges, sliced
3 large onions, sliced
25 clove garlic
3 medium bay leaves
2 medium each limes &lemons, sliced
32 oz beef broth or chicken broth
8-9 lb pork shoulder roast (bone in)

Steps:

  • 1. Wash the roast & pat dry with paper towels. PLEASE NOTE THAT YOU CAN COOK THIS ROAST IN THE OVEN OR EVEN ON THE GRILL IF DESIRED.
  • 2. Then using a sharp knife, make deep gashes into the roast on the fat side, this allows the spices to penetrate the roast. Stuff slivers of garlic cloves into the roast for added flavor if desired. The fat prevents the roast from drying out during it's long cooking time in the oven.
  • 3. Combine the spices and season the roast liberally on all sides.MAY NOT USE ALL OF THE SPICES. Store roast in a 2 gallon reclosable bag & refrigerate overnight. Marinate overnight if possible. Or at least an hour or two to allow spices to penetrate the meat. Bring roast to room temperature on the counter top before placing in roaster. This helps to start cooking at an even temperature.
  • 4. Preheat roaster oven to 350 degrees. Or follow directions for your roaster oven. Slice fruits and onions into thick slices.
  • 5. Using a meat rack add a variety of the slices of fruit, onion and garlic cloves on the bottom of the rack. Then top with the seasoned roast BE SURE THE FAT SIDE IS ON TOP(UP).THIS WAY THE FAT PENETRATES THE MEAT AS IT COOKS. Add the remaining fruit slices, throw in the bay leaves, and pour in the beef or chicken broth along the perimeter of the roaster. Cover the roast with a lid and continue to cook until meat is fork tender, and bone can be pulled away from the meat with your fingers.
  • 6. NOTE COOKING TIME VARIES, DEPENDING ON THE SIZE OF THE ROAST. i COOKED 2 AT ONE TIME FOR A TOTAL OF JUST OVER 20 POUNDS, AND REQUIRED A TOTAL COOKING TIME OF 9 HOURS & 40 MINUTES.
  • 7. Once roast is fully cooked, allow to cool, remove the bone. I was able to remove the bone by pulling it from the roast, with very little resistance after the 9 hours and 40 minutes cooking time.
  • 8. Now shred with 2 forks, or slice with an electric knife. I chose to slice with an electric knife. I gave one of the roasts to my neighbor and her family.
  • 9. Serve roast on Hamburger Buns with your favorite sauce, or favorite chili sauce with added accompainments as desired.

SLOW-ROASTED PULLED PORK BUTT



Slow-Roasted Pulled Pork Butt image

Here is a convenient way to duplicate succulent, hickory-smoked pork barbecue with only a fraction of the fuss. Just pop a pork butt in the oven, then finish it off quickly on the grill for smoky flavor, and voilà: a tender heap of slow-cooked, vinegar-spiked meat that you'd never know hadn't spent the whole day over the coals.

Yield serves 8 to 10

Number Of Ingredients 6

One 5-pound bone-in pork butt
2 teaspoons crushed red pepper flakes
Sea salt and freshly ground black pepper
1/2 cup apple cider vinegar
1/2 cup water
2 cups Say's Vinegar Barbecue Sauce (page 309), plus more for serving

Steps:

  • Preheat the oven to 325°F.
  • Rinse the pork, pat dry, and season with the red pepper flakes and salt and black pepper to taste, massaging the seasoning into the meat. Place the pork, fatty side up, in a large Dutch oven and add the vinegar and water to the bottom of the pan. Cover with a tight-fitting lid or foil and roast, undisturbed, for 2 1/2 to 3 hours, until tender.
  • Prepare a hot fire in a charcoal or gas grill and let the coals burn to a gray ash; if using a gas grill, heat the grill on the lowest setting. Pour Say's Vinegar Barbecue Sauce over the pork and transfer the meat to the grill. Cover and cook for about 15 minutes per side, until slightly charred all over and smoky in flavor, baking with the same sauce while cooking.
  • Remove the pork from the grill and let rest, loosely covered, for 10 to 15 minutes before serving. Using a fork, pull the meat into large pieces, remove any extra-large chunks of fat, and serve warm with more barbecue sauce.
  • For an even easier no-fail approach to pulled pig, use my mom's go-to method. Place the pork butt in a plastic oven bag and pour the vinegar and 1 cup water over and around the meat. Season the meat by rubbing with salt and pepper and seal the bag by tying the open end tightly with kitchen string. Place in the middle of a preheated 325°F oven and roast, undisturbed, for 2 1/2 to 3 hours, until the meat is fork-tender (see Know-how, page 172) and falling off the bone. Serve warm with West Tennessee Thick and Sticky BBQ Sauce (page 307) spooned on top.
