OVEN-ROASTED MUSSELS WITH FRESH SPINACH



Oven-Roasted Mussels With Fresh Spinach image

Mussels don't have to be steamed. They will pop open in a hot, dry cast iron skillet on a grill or in the oven. In this dish they are first tossed with garlic, olive oil and wine, then roasted along with the marinade in a pan in a hot oven. You may have to do this in batches, depending on the size of your skillet or baking dish. I like to use cast iron or enameled cast iron. This particular recipe is inspired by one in "The Mozza Cookbook," by Nancy Silverton. Served over a generous bed of steamed spinach, this is a beautiful dish. If you have leftovers, remove the mussels from the shells, chop the spinach and toss with pasta.

3 1/2 pounds black mussels
2 tablespoons extra virgin olive oil
2 to 4 garlic cloves (to taste), minced
1/2 cup dry white wine
1 pound roma tomatoes, seeded and finely chopped
1/4 to 1/2 teaspoon red pepper flakes
1/4 cup minced flat-leaf parsley
Salt and freshly ground pepper to taste
2 generous bunches fresh spinach (about 1 1/4 to 1 1/2 pounds), stem ends trimmed away, washed well in 2 rinses of water

Steps:

  • Preheat the oven to 400 degrees. Clean the mussels. Inspect each one carefully and discard any that have opened (if some are partly open, tap them with your finger, and if they close back up they are O.K.) or have cracked shells. Place in a large bowl, fill the bowl with cold water and rinse several times, swishing the mussels around in the water, pouring out the water and refilling. Clean the shells, if necessary, with a brush or the end of one of the mussels, and pull out the beards -- the hairy attachments emerging from the shells. Do not do this until just before cooking, or the mussels will die and spoil.
  • Combine all of the ingredients in a large bowl and toss with the mussels. Refrigerate for 10 minutes.
  • Arrange the mussels, pointed ends up, in a single layer in a cast iron skillet and/or a heavy baking dish. Spoon the marinade left in the bowl over the mussels and place in the preheated oven. Bake for about 10 minutes, until most of the mussels have opened.
  • Meanwhile, steam the spinach in a large pot above 1 inch of boiling water until tender, about 5 minutes. Remove from the heat, arrange on a large round platter, and season with a little bit of coarse sea salt and pepper.
  • Arrange the mussels that have opened on top of the spinach and return the pan to the oven for another 5 minutes. Remove from the heat and discard any mussels that have not opened. Arrange all of the mussels on top of the spinach, pour the juices in the pan over the mussels and spinach, sprinkle on the parsley and serve over a bed of steamed spinach, with crusty bread.

1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh chives

2 garlic cloves, minced
2 teaspoons chopped fresh thyme
1 teaspoon grated lemon peel
4 5x3x1/2-inch slices crusty sourdough bread
1/4 cup extra-virgin olive oil
2 pounds mussels, scrubbed, debearded
Additional chopped fresh chives

Steps:

  • Mix first 8 ingredients in small bowl. Season herb butter with salt and pepper. (Can be prepared 1 day ahead. Cover and chill.) Position 1 rack in top third and 1 rack in bottom third of oven; preheat to 500. Brush bread on both sides with oil; place on baking sheet. Place bread on top oven rack; toast until golden, turning once, about 5 minutes per side. Meanwhile, place mussels in wide ovenproof pot. Cover, place on bottom oven rack, and roast just until mussels open, about 5 minutes. Remove pot from oven and discard any mussels that did not open. Add herb butter to mussels; stir until melted. Season to taste with ground black pepper. Divide mussels and juices from pot among 4 bowls. Sprinkle with additional chopped chives. Top each serving with sourdough toast and serve.

  • Mix 1st seven ingredients in a small bowl; season with salt and pepper.
  • Brush bread on both sides with olive oil; place on top baking rack in oven.
  • Place mussels in wide oven-proof pot; cover and put on bottom rack.
  • Roast mussels until mussels open, about 5-9 minutes.
  • Watch bread until it is lightly toasted.
  • Remove any mussels that did not open.
  • Add herb butter and stir until melted.
  • Divide mussels and juices among bowls and sprinkle with remaining chopped chives.
  • Serve with bread.

1 head garlic
Extra-virgin olive oil, for drizzling
4 tablespoons butter
4 sprigs fresh thyme
2 cups fruity red wine, such as Gamay or Barbera
Coarse salt
4 pounds fresh mussels, scrubbed thoroughly
1/2 cup fresh flat-leaf parsley leaves, chopped

Steps:

  • Heat oven to 375 degrees. On parchment-lined foil, drizzle garlic with oil; tightly seal. Bake until tender, about 1 hour. Once cool, remove cloves from papery skin and set aside.
  • In a large pot, heat 1 tablespoon butter over medium heat; add thyme and roasted garlic cloves. Cook 1 to 2 minutes, then add wine and season with salt. Bring to a boil, add mussels, and reduce heat to medium. Cook, covered and undisturbed, until shells have opened, 6 to 8 minutes.
  • Stir mussels and, with a slotted spoon, transfer to a warm serving bowl. (Discard unopened shells.) Return broth to a boil and reduce by half. Whisk in remaining 3 tablespoons butter and parsley. Ladle sauce over mussels and serve immediately.

RED CURRY MUSSELS AND ROASTED SWEET POTATOES



Red Curry Mussels and Roasted Sweet Potatoes image

Moules-frites, a hearty bowl of mussels served with fries on the side, is very popular in Belgium and France. This version is seasoned with Thai spices and paired with sweet potatoes - not traditional at all, but totally satisfying. The recipe calls for commercially made red curry paste, which makes this dish quick to prepare. It shouldn't be hard to find at Asian grocers and online, but do try to obtain makrut lime leaves, which impart a lovely floral note.

6 medium sweet potatoes (about 3 pounds)
3 tablespoons melted coconut oil or vegetable oil
Salt and pepper
1 teaspoon cumin seeds, toasted and ground
1/2 teaspoon ground cayenne, or less to taste
2 tablespoons vegetable oil
1 medium red onion, diced
4 bird's-eye chiles, split to the stem, seeds left in
6 garlic cloves, minced
1 (2-inch) piece fresh ginger, finely chopped (3 tablespoons)
2 tablespoons finely chopped lemongrass
3 tablespoons Thai red curry paste
1 tablespoon tomato paste
1 teaspoon fish sauce
3 or 4 makrut lime leaves
3 cups thick coconut milk (about 1 1/2 cans, well shaken before opening)
3 pounds mussels, cleaned
1 cup roughly chopped cilantro leaves and tender stems, for garnish
1 Fresno chile, sliced, for garnish
1 cup Thai basil leaves, or another kind of basil, for garnish
Lime wedges, for serving

Steps:

  • Prepare the sweet potatoes: Heat oven to 450 degrees. Peel the sweet potatoes, and cut them lengthwise into slender wedges. Put them in a large bowl, and toss them with coconut oil to coat. Season generously with salt and pepper. Transfer to a rimmed baking sheet and spread out in a single layer. Bake, uncovered for 15 minutes, then reduce heat to 400 degrees. Bake for 30 to 40 minutes until tender with a crisp exterior. Before serving, sprinkle with cumin and cayenne.
  • While sweet potatoes are baking, make the curry: Put vegetable oil in a Dutch oven or heavy-bottomed pot with a lid over medium-high heat. Add onions and cook until lightly browned and softened, about 8 minutes, stirring frequently.
  • Add chiles, garlic, ginger and lemongrass and let sizzle for about 1 minute. Then add red curry paste and tomato paste and fry with the onion mixture for 2 minutes more.
  • Add fish sauce, lime leaves and coconut milk. Bring mixture to a boil, then add mussels and stir to coat with sauce. Cover and cook mussels, stirring once or twice, until all the mussels have steamed open, 8 to 10 minutes.
  • Ladle mussels and lots of sauce into deep, wide bowls. Sprinkle with cilantro and Fresno chile slices and top with basil leaves. Serve with a platter of hot sweet potatoes and lime wedges.

2 pounds fresh blue mussels, debearded and rinsed
1 1/2 ounces whole almonds, skin on
3 1/2 tablespoons unsalted butter
1 1/2 tablespoons finely minced shallots
2 cloves garlic, finely minced
6 tablespoons dry white wine, such as Sauvignon Blanc
1 tablespoon fresh lemon juice
1 1/2 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon chopped fresh thyme leaves
1 tablespoon chopped fresh chervil leaves
Coarse sea salt and freshly ground pepper
Crusty bread, for serving

Steps:

  • Preheat oven to 400 degrees. Spread almonds in an even layer on a baking sheet. Transfer baking sheet to oven and roast until fragrant, about 5 minutes; let cool. Coarsely chop almonds by hand or pulse in a food processor.
  • Place a 5 1/4 quart nonreactive cast-iron roasting pan over medium heat. Add 1 tablespoon butter and cook until melted. Add shallots and garlic, cooking until translucent, 2 to 3 minutes. Add wine and lemon juice, bring to a boil, and immediately remove from heat. Toss in herbs and almonds; season with salt and pepper.
  • Increase oven temperature to 450 degrees. Arrange mussels in the roasting pan in no more than two even layers. Cut remaining 2 1/2 tablespoons butter into pieces and place over mussels. Transfer to oven and roast, tossing mussels to coat, every 3 to 4 minutes, until mussels have opened and sauce is creamy. Serve immediately with bread for dipping.

1 cup dry white wine
3/4 cup water
2 pounds mussels (preferably cultivated), scrubbed well and beards removed
3 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 450°F.
  • Halve potatoes lengthwise and trim a 1/4-inch-thick slice from side opposite cut side of each potato half to form 8 flat slabs (1/2 to 3/4 inch thick). Discard trimmings, then coat potato slabs with 2 tablespoons oil and sprinkle with all of salt. Arrange in 1 layer in a large shallow baking pan (1 inch deep) and roast in middle of oven, turning over once halfway through roasting, until golden brown and tender, 25 to 30 minutes total.
  • Shortly before potatoes are done, cook shallot, garlic, and red pepper flakes in 2 tablespoons oil in a deep 12-inch heavy skillet over moderate heat, stirring, until softened, about 3 minutes. Add wine and water and bring to a simmer. Add mussels and cook, covered, over moderately high heat until they just open wide, checking frequently after 3 minutes and transferring opened mussels to a bowl. Discard any mussels that remain unopened after 6 minutes.
  • Whisk parsley and remaining 2 tablespoons oil into mussel broth and season with salt and pepper.
  • Divide potatoes among 4 shallow bowls and top with mussels and broth.

  • 1. Set the oven at 400. 2. In a bowl, cream the butter with the shallots, garlic, parsley, 2 tablespoons of the chives, thyme, lemon rind and juice, hot sauce, and salt. 3. Set the bread slices on a baking sheet. Brush them with oil. Roast them in the oven for 5 minutes, watching them carefully, or until they are golden. 4. Turn the oven temperature to 500 degrees. In a large roasting pan, place the mussels. Discard any that are open. Cover with foil and transfer to the oven. Roast the mussels for 5 minutes or until they open. Remove the pan from the oven and discard any mussels that are not open. 5. Add the butter mixture to the mussels. Shake the pan to mix it in. Add salt and pepper. 6. Divide the mussels and the juices among 4 or 8 bowls. Sprinkle with the remaining chives. Top each with a slice of toast.

MUSSELS WITH FENNEL AND ROASTED RED PEPPER BUTTER

For the red pepper butter
1 stick (1/2 cup) unsalted butter, softened
2 red bell peppers, roasted (procedure follows)
1 garlic clove, chopped, if desired
1/4 teaspoon dried hot red pepper flakes
3 1/2 pounds mussels
1 1/2 cups dry white wine
1/4 cup medium-dry Sherry
2 cups thinly sliced fennel bulb
1 1/2 cups thinly sliced shallot
1/4 teaspoon dried hot red pepper flakes
1 teaspoon fennel seeds
2 fresh thyme sprigs or 1/4 teaspoon dried
1/2 teaspoon salt

Steps:

  • Make the red pepper butter:
  • In a food processor or blender blend the butter with the roasted peppers, the garlic, the red pepper flakes, and salt to taste until the mixture is smooth. The red pepper butter may be made 2 days in advance and kept covered and chilled.
  • Scrub the mussels well in several changes of cold water, scrape off the beards, and rinse the mussels. In a large kettle combine 4 cups water, the white wine, the Sherry, the fennel bulb, the shallot, the red pepper flakes, the fennel seeds, the thyme, and the salt and boil the mixture, covered, for 3 minutes. Add the mussels, boil them, covered, shaking the kettle occasionally, for 4 to 6 minutes, or until the shells have opened, and discard any unopened mussels. Arrange the mussels, the fennel bulb, and the shallot in shallow bowls, ladle the hot broth over them, and spoon about 1 tablespoon of the red pepper butter in the center of each serving. Serve the remaining red pepper butter separately.
  • To roast peppers:
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on a rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. ( Wear rubber gloves when handling chilies.)

40 (about 3 pounds) New Zealand green mussels or other large mussels
1 cup white wine
3 sprigs thyme
3/4 cup homemade mayonnaise
1 tablespoon lemon juice
1 1/4 teaspoons hot Chinese-style mustard powder
1 roasted red bell pepper, skinned, seeded and chopped
Kosher salt to taste
Fresh thyme leaves for garnish

Steps:

  • Scrub the mussels, and use a paring knife to remove any beards that protrude from the shells. Place the mussels in a large bowl of very cold water to soak briefly.
  • In a large kettle, bring the wine to a boil and add the thyme sprigs. Drain the mussels and add them to the kettle. Cover and cook, stirring once or twice, until they open, about 5 minutes. (Discard any that do not open.) Set aside to cool.
  • Meanwhile, in the container of a blender, combine the mayonnaise, lemon juice, mustard powder and roasted pepper. Blend until smooth. Scrape into a bowl, season to taste with salt and refrigerate until ready to use.
  • Break the mussel shells apart, discarding the tops and leaving the meat attached to the bottoms. Divide among 6 plates and top each mussel with 1/2 teaspoon of the mustard sauce. Sprinkle each with a pinch of thyme leaves and serve.

ROASTED BREADED MUSSELS (COZZE AL FORNO)

Here is a great Italian appetizer recipe that we served at the catering company many times--a delightful taste of mussels, garlic, and cheese in a crusty topping. It's easy to make and a great crowd pleaser--try it at your next party!

2 lbs medium mussels, scrubbed well
2 tablespoons fresh garlic, minced
3 tablespoons flat leaf parsley, chopped
1/2 teaspoon dried oregano, crumbled
2 tablespoons parmigiano, freshly grated
1/4 cup Italian seasoned breadcrumbs
1/4 cup extra virgin olive oil

Steps:

  • Preheat the oven to 425°F.
  • Prepare the scrubbed mussels for cooking by checking to make sure that none of the shells are open (discard the open ones).
  • Place the mussels in a pan with 1/2 cup of water or dry white wine over medium high heat and cook stirring frequently just until the mussels begin to open. Remove and put into a bowl as the shells will continue to open.
  • When all of the mussels are removed, strain the liquid through a sieve or cheesecloth and reserve the liquid. You should have a 1/4 cup of the liquid. Now remove the mussels from their shells reserving half of the shells. Place the halved shell on a baking sheet and place a mussel in each one.
  • In a small bowl, combine the garlic, parsley, oregano, grated cheese, and breadcrumbs. Now sprinkle the mixture over the mussels in a thin layer. Now drizzle the olive oil and a little of the reserved liquid over the breadcrumb mixture.
  • Bake the mussels for about 10 minutes or until the tops of the breadcrumbs are brown and crisp (careful not to burn the breadcrumbs).
  • Serve right away and enjoy.

4 ounces Spanish chorizo, chopped
2 cups canned crushed tomatoes, with their juice
1 cup dry white wine
Kosher salt and freshly ground black pepper
2 pounds mussels, rinsed, scrubbed, and de-bearded
1 cup chicken stock or dry white wine
4 lemon wedges, for garnish

Steps:

  • Tomato Sauce:
  • To make the tomato-sausage base, put a saucepan over medium-high heat and add the oil. Add the onions and cook until translucent, stirring, about 2 to 3 minutes. Add the chorizo and saute for 1 to 2 minutes. Add the tomatoes and wine, reduce the heat to a simmer, and simmer gently until slightly thickened and reduced, about 10 to 15 minutes. Season, to taste, with salt and pepper. Keep the tomato base warm while you cook the mussels.
  • Mussels:
  • Put the mussels in a large skillet or wok over high heat, add the stock or wine, and cover with a lid. Cook the mussels until they open, about 5 minutes. Remove the lid, and pour the tomato-sausage base over the mussels. Cook for 1 to 2 minutes, until fully heated through. Divide the mussels among 4 shallow soup bowls and serve immediately, garnished with lemon wedges.

ROASTED MUSSELS WITH ALMONDS AND GARLIC

This recipe can be prepared in 45 minutes or less.

2‚ pounds mussels (preferably cultivated)
1/4 cup natural whole almonds
4 garlic cloves
1/2 cup packed fresh flat-leafed parsley leaves
3/4 cup dry white wine
3 tablespoons unsalted butter

Steps:

  • Preheat oven to 425°F.
  • Scrub mussels well and remove beards. Finely chop almonds and on a baking sheet toast in middle of oven until golden, about 4 minutes.
  • Mince garlic and chop parsley. In an ovenproof kettle at least 10 inches wide combine mussels, garlic, parsley, wine, and butter and season with pepper. Roast mussels, uncovered, in middle of oven, stirring once halfway through roasting, 15 minutes, or until mussels have opened. Discard any unopened mussels. Add almonds, tossing to combine.
