BAKED CRANBERRY CHICKEN WITH ROSEMARY

This easy baked cranberry chicken recipe with rosemary is the perfect festive dinner! Bold flavors from fresh garlic, rosemary, citrus, and tangy-sweet cranberries come together to create a show-stopping dish. If you like, you can marinate the chicken in the seasoning and citrus for a couple hours in the fridge or just do as in the recipe and allow it to sit at room temperature for a few minutes.

2 cups fresh cranberries
1/3 cup brown sugar
2-3 tbsp white wine vinegar (more for later)
6 pieces bone-in (skin on chicken (I used 2 chicken breasts and 4 thighs))
6-8 garlic cloves (minced)
Salt and pepper
1 1/2 tbsp chopped fresh rosemary (or 1 1/2 tsp dry rosemary)
1 tsp sweet paprika
1/3 cup Extra virgin olive oil
1 lemon (juice of (do not discard used lemon halves))
1 large yellow onion (chopped)
3 celery stalks (chopped)
1/2 cup chicken broth or water
More fresh rosemary for garnish

Steps:

  • In a small bowl, combine the cranberries, brown sugar, and white wine vinegar. Set aside for now.
  • Pat the chicken pieces dry. Rub the chicken with the minced garlic on both sides (make sure to apply some of the garlic underneath the chicken skins). Season well with salt and pepper. Combine the rosemary and paprika then apply to the chicken pieces on both sides and again underneath the skin.
  • In a large bowl or deep enough dish, mix the olive oil, lemon juice and 2 tbsp white wine vinegar. Now add the chicken, celery, onions, and used lemon halves. Work everything together with clean hands. Set aside to marinate just for 15 minutes or so.
  • Preheat the oven to 425 degrees F.
  • Heat 1 tbsp olive oil in a skillet. Place the chicken skin side down to brown on medium-high for 5 minutes. Turn over and brown on the other side.
  • Place the chicken, onions, celery, lemon halves and any liquid from the marinade in a lightly oiled baking pan. Add 1/2 cup water or chicken broth, then add the sugared cranberries.
  • Bake in the 425 degrees F heated-oven for 35 to 40 minutes or until the chicken is fully cooked through. Serve hot with Lebanese rice and your favorite salad.

1 (1 ounce) packet dry onion soup mix seasoning
Zest from ½ of an orange

Steps:

  • Preheat oven to 375 degrees. Spray a 2-quart baking dish with cooking spray. Season chicken with salt and pepper, to taste.
  • Place chicken in the prepared dish. In a separate bowl, stir together salad dressing, cranberry sauce, dry onion soup mix seasoning and orange zest. Pour sauce over chicken.

¼ cup butter, softened
4 cloves garlic, chopped
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 lemon, zested and halved
1 teaspoon salt, divided

1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.

1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.

2 tablespoon(s) lemon juice
1/2 cup(s) whipping cream
1 teaspoon(s) tarragon, dried
3 - zucchinis, grated
1 pound(s) mushrooms, finely chopped
1 medium onion, finely chopped
2 tablespoon(s) butter
- STUFFING INGREDIENTS
2 cup(s) chicken stock

Steps:

  • To buy boneless chicken breasts with the skin on, purchase chicken breasts on the bone and ask your butcher or supermarket to remove the bones but leave the skin intact.
  • It is a much more beautiful presentation and it keeps the chicken moist.
  • Bones can be used to make stock or discarded.
  • If you prefer, obtain skinless chicken, then make a cut on the bottom of each breast the length of the breast to form a pocket.
  • Stuff each breast with same amount of filling and turn slit side down.
  • Brush top with a film of dijon mustard and continue with recipe.
  • To heighten mushroom flavor, add one 10 gram package of soaked dried mushrooms along with the regular mushrooms, if desired.
  • Dried currants may be substituted for cranberries.
  • Trim chicken breasts of any fat.
  • Heat butter in skillet on medium high heat.
  • Add onion, saute, until softened then add mushrooms and zucchini.
  • Saute until all liquid has evaporated, stirring occasionally, about 10 minutes.
  • Stir in tarragon and cream.
  • Continue to cook until cream has reduced and mixture is thick, about 5 minutes.
  • Stir in lemon juice and add enough breadcrumbs to hold mixture together.
  • Add parsely and season well with salt and pepper.
  • Season chicken breasts with salt and pepper.
  • With fingertips, make a pocket between skin and flesh of each chicken breast.
  • Stuff about 1/3 cup filling under skin, tucking skin around breast to enclose stuffing.
  • Place chicken breasts in large oiled (preferably metal) baking dish or roasting pan.
  • Dot with butter, refrigerate until one hour before baking.
  • Bake in 400 degree oven for 30 to 40 minutes or until juices run clear.
  • If skin is not quite crisp enough, place under broiler to crisp it.
  • While chicken is baking, place sauce ingredients in pot and bring to boil over medium high heat.
  • Reduce by half, skimming occasionally, about 25 minutes.
  • Over low heat, whisk in butter, 1 tablespoon at a time, until sauce is slightly thickened and glossy.
  • Just before serving, skim any fat off pan juices and add juices to sauce.
  • Either slice chicken breasts into 1/4 inch slices before serving and coat with sauce or serve chicken breasts whole and place sauce in sauce boat.
  • Garnish with extra dried cranberries, if desired.

1 tablespoon chopped fresh thyme or 1 1/2 teaspoons dried

1/2 cup whole berry cranberry sauce
1/2 cup canned low-salt chicken broth
1/2 cup orange juice
2 tablespoons Dijon mustard
2 tablespoons whipping cream

Steps:

  • Sprinkle chicken with thyme, salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add chicken and cook until brown, about 3 minutes per side. Transfer chicken to plate. Add all remaining ingredients to skillet; bring to boil, scraping up any browned bits and whisking to blend well.
