1 (12 -18 lb) pork shoulder
4 cups apple juice
4 beef bouillon cubes
2 large fuji apples, chopped
1 large red onion, same size pieces
1 cup sweet chili sauce
6 large garlic cloves, diced fine
2 tablespoons soy sauce
1 teaspoon onion salt
1 tablespoon paprika
1 teaspoon cayenne pepper

Steps:

  • Dissolve beef boullion cubes in warm/hot apple juice.
  • Place all in crock pot.
  • Let it do its thing for 6 hours on high. There's going to be a lot of juice -- like a pot roast/stew kinda thing. Its really fork-tender we suggest serving with garlic mashed potatoes.

2 tablespoons plus 1-1/2 teaspoons paprika
1-1/2 pounds boneless pork loin roast, cut into 1-inch strips
1 tablespoon canola oil
1 can (20 ounces) unsweetened pineapple chunks
1 medium onion, chopped
1 medium green pepper, chopped
1/4 cup cider vinegar
3 tablespoons packed brown sugar
3 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water
Thinly sliced / chopped green onions, optional
Hot cooked rice, optional

Steps:

  • Place paprika in a large shallow dish. Add pork, a few pieces at a time, and turn to coat. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. Brown pork in batches. Return all pork to pressure cooker., Drain pineapple, reserving juice; refrigerate the pineapple. Add the pineapple juice, onion, green pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce and salt to pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Quick-release pressure., Select saute setting and adjust for high heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into pork mixture. Add pineapple. Cook and stir until sauce is thickened, 1-2 minutes. If desired, sprinkle with green onions and serve over rice.

1/3 cup coriander seeds
1 1/2 cups fine dry bread crumbs
1/2 cup extra-virgin olive oil
1 teaspoon cracked black pepper
3/4 teaspoon salt
3 lb center-cut boneless pork loin roast, butterflied
For chile cilantro sauce
1 red bell pepper, cut into 1/2-inch pieces
1/2 cup caribe* (crushed New Mexico red chiles)
1 cup honey
1/2 cup fresh lime juice
1 teaspoon salt
1/4 cup chopped fresh cilantro
*Available at specialty foods shops or by mail order from The Chile Shop (505-983-6080).

Steps:

  • Prepare pork loin:
  • Preheat oven to 400°F.
  • Coarsely crush coriander seeds with a mortar and pestle or an electric coffee/spice grinder, then stir together with bread crumbs, oil, pepper, and salt in a small bowl.
  • Turn pork so a long side is closest to you and season with salt and pepper. Pat one third of seasoned crumbs onto pork, leaving a 2-inch border along top edge. Starting with side nearest you, roll meat into a cylinder and tie securely with kitchen string. Coat pork with remaining crumbs.
  • Roast pork on a rack in a roasting pan in middle of oven 15 minutes. Reduce temperature to 325°F and roast until an instant-read thermometer diagonally inserted at least 2 inches into meat registers 155°F, 1 to 1 1/4 hours more. Let pork stand, loosely covered, 10 minutes.
  • Make sauce while pork roasts:
  • Simmer bell pepper, caribe, honey, lime juice, and salt in a 1-quart heavy saucepan over moderate heat, stirring occasionally, until sauce is slightly thickened, about 30 minutes. Cool sauce to warm or room temperature, then stir in cilantro just before serving.
  • Slice pork and serve with sauce.
