5 tablespoons beef bouillon granules
3 tablespoons dried parsley flakes
2 tablespoons dried minced onion
4 teaspoons dried basil
2 teaspoons dried thyme
1 teaspoon garlic powder
ADDITIONAL INGREDIENTS (for each batch):
2 cups water
1 cup uncooked long grain rice

Steps:

  • In an airtight container, combine the first six ingredients. Store in a cool, dry place for up to 1 year. Yield: 4 batches (about 3/4 cup total). , To prepare rice: In a saucepan, bring water and 3 tablespoons herb mix to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes or until rice is tender and liquid is absorbed.

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
1 1/2 cups minced onion (from 1 onion)
3 cups long-grain white rice
Coarse salt
4 1/2 cups water
3 cups diced zucchini (from 2 zucchini)
1/2 cup finely chopped mixed fresh herbs, such as flat-leaf parsley, dill, and chervil

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Add onion, and cook, stirring, until translucent, about 5 minutes. Stir in rice and 2 teaspoons salt. Stir rice until coated with oil, then cook 1 minute. Add water, and bring to a boil. Reduce heat, cover, and simmer until water is absorbed, about 16 minutes. Turn off heat. Let rice stand, covered, 10 minutes.
  • Meanwhile, bring a medium pot of water to a boil. Add zucchini, and cook until tender, about 2 minutes. Drain.
  • Add zucchini and herbs to rice, and fluff with a fork.

Inspired by my Recipe #389128, this is perfect for any picnic or BBQ. Feel free to add ANY veggies you have lying around. My best friend said that it would be good with tomatoes and avocados. Cooking time includes cooking and cooling the rice.

1 1/2 cups brown rice, dry
1/2 cup fresh parsley
1/2 cup fresh basil
1/4 cup of fresh mint
1/2 cup onion
1 garlic clove
1/2 cucumber
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/4 cup toasted pine nuts (optional)
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper

Steps:

  • At least a few hours before you plan to serve this dish, cook the brown rice according to the package directions. Allow it to cool for about an hour.
  • Chop the herbs and veggies. Whisk the oil and lemon juice together.
