ZESTY GINGER-TOMATO CHICKEN image

2.5-3 lbs chicken thighs
2 14 oz cans diced tomatoes
2 tbsp quick tapioca
1 tbsp fresh grated ginger
1 tbsp snipped fresh cilantro or parsley
4 cloves garlic, minced
1/2 tsp crushed red pepper
1/2 tsp salt
3 c hot, cooked, quinoa or brown rice

Steps:

  • 1. Place chicken in 3.5-4 qt slow cooker. Drain one can of tomatoes, combine in large bowl with other can (and the juice) the tapioca, ginger, garlic, 1 tbsp of the cilantro, red pepper and salt. Pour over chicken. 2. Cover and cook on low for 6-7 hours. 3. Skim off fat, serve over quinoa in shallow bowls.
