Steps:
- To make ginger juice - peel a 3 oz piece of ginger and grate it over a plate. Wrap in cheesecloth; twist at both end to squeeze out the jice. Or put the grated ginger in a finemesh sieve and press to release the juices - OR, make it easy and make ginger syrup with sugar and grated ginger - strain and add as directed below... Please 1/2 cups watermellon and 3/4 cup cup cold water in blender - puree until smooth. Pour agua fresca into large pitcher. repeat 3 more times with remaining watermelon and cold water. Add lime juice and 1/4 cup sagr and ginger juice to pticher and stir to blend. Add more sugar to taste. Refrigerate until well chilled at least 3 hours. Garnish with ice cubes and lime wedges.
