VODKA TOMATO-CREAM SAUCE image

Number Of Ingredients 12

bottle of vodka (use aue approx 1/4 cup)
3 tablespoons olive oil
1 onion, diced
handful of sliced mushrooms (optional)
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/2 tbs crushed red pepper
1/8 teaspoon ground black pepper
1/2 cup heavy cream

Steps:

  • In a saucepan, saute onion, (mushrooms), and garlic in olive oil over medium heat. Add a quick stream of vodka around pan. Take a swig of vodka while you wait for vodka in pan to dissolve. Add cream and allow to thicken. Add tomatoes, basil, oregano, salt and peppers. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates.
