Vegan Nacho Cheese image

1 cup diced potato
1/3 cup chopped onion
1/4 cup diced carrot
3/4 cup boiled water
1/2 cup raw cashews
1/4 coconut milk
2 tablespoons nutritional yeast flakes
1/2 teaspoon garlic powder
1 tablespoon lemon juice
1 3/4 teaspoons sea salt
1 dash paprika
1 dash cayenne pepper (optional)

Steps:

  • In a small pot bring several cups of water to a boil.
  • Add potatoes, carrots, and onions to boil for 10 minutes or until tender.
  • Place boiled ingredients into a blender with 3/4 cup of boiled water (preferably same water as just used).
  • Add all other ingredients and blend until smooth.
  • Enjoy with chips or place in pasta to make macaroni & cheese!
