Number Of Ingredients 17

1/2 lb. stick(s) butter, room temperature
1 cup - brown sugar, firmly packed
1/2 cup - granulated sugar
2 - eggs
1 teaspoon(s) vanilla extract
1 teaspoon(s) orange extract
2 tablespoon(s) minced orange peel
1 tablespoon(s) hot water added to ginger below
2 tablespoon(s) crystalized or fresh ginger
1 1/2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon, ground
1/2 teaspoon(s) salt
3 cup(s) quaker oatmeal, quick or old fashion, uncooked
1/2 cup(s) craisins
1/2 cup(s) raisins
1/2 cup(s) pecans, in pieces

Steps:

  • Cream together room temp butter with brown and white sugar until creamy and light looking. Add eggs, vanilla, cinnamon, orange, ginger finely minced in warm water about a tablespoon if using crystalized only! Add flour, baking soda, and remaining ingrediants. Mix well.
  • I use a large soup spoon about 1 1/2 Tblsp. of dough and put 6 on a very large rimmed cookie sheet with a silacone peel on it. Bake 10 to 12 if smaller and 17 if larger. They will be light brown around the edges. You can let them cool on one sheet and pop in the other one if you have two.I can make about 17 or 20 cookies in one shot and put them in a plastic container on the counter. A cookie jar would be great huh? Enjoy!
