TWICE BAKED POTATOES image

(The number of potatoes you use depends on how many you are feeding or if you use it as a meal versus an appetizer or side dish.)

Number Of Ingredients 8

6 medium baking potatoes
1 tsp salt
1/8 tsp pepper
1/4 c butter, room temperature
1/2 c sour cream
1 c shredded cheese
1-2 Tbsp chopped chives
2-4 Tbsp cooked, crumbled bacon

Steps:

  • 1. Bake potatoes 45 to 60 minutes at 400 degrees, or until tender. Cut into halves lengthwise. Scoop potatoes out of the shell into a bowl and mash. SAVE SHELLS and set them aside. Add the salt, pepper, butter and sour cream. Beat until light and fluffy. Spoon back into shells. Place on baking sheet and top them with the shredded cheese, chives and bacon. Bake UNCOVERED 20-25 minutes or until HOT.
