Louisiana Steak image

This was one of my mom's favorite dishes. She didn't make it all that often, but when she did, all of her children flocked home. I sometimes serve this over buttered egg noodles. Plus, it came from my mom and dad's recipe bag. Ymmmmm good!

1 1/2 lb round steak, cut 1 inch thickness
3-4 sweet potatoes, peeled, sliced
1 medium onion, sliced
1 medium green pepper, seeded, sliced into rings
1 16 oz can(s) whole tomatoes
1 c beef broth
3 Tbsp oil
2 Tbsp flour
1 clove garlic, minced
1 tsp sugar
1/2 tsp salt
1/2 tsp thyme
1/2 tsp pepper
3-5 dash(es) frank's, or favorite hot sauce

Steps:

  • 1. Cut round steak into 1-1 1/2 inch slices. Pound steak almost to half thickness. Add oil to dutch oven, heat on med. high. Brown steaks on each side. Remove steaks, set aside to rest.
  • 2. Turn heat down to med. low add flour to oil and whisk/stir to blend, scrapping up the brown bits. Cook a minute or two, add garlic and stir. Add chopped tomatoes with juice, beef broth, salt, pepper, thyme and hot sauce. Stir till combined.
  • 3. Turn heat down to med. low, add sweet potatoes, onions and green pepper rings. Stir to combine. Cook for about 5 minutes, making sure all is blended.
  • 4. Turn heat to low, place steak into the mix, slightly submerging and add any juices from resting steak. Cover and cook for 1-1 1/2 hours, until desired tenderness. Remove from heat, serve and Enjoy~
