Twice Baked Cheesy Potato Casserole image

To speed up this delicious potato dish. I microwave my potatoes. This is one delicious dish. You could add other favorites to it with no problem. This recipe could easily be halved also. It makes a deep dish full. Enjoy!

12 unpeeled potatoes, baked ( medium )
1 tsp salt
1 tsp pepper
2 lb bacon, cooked and crumbled
3 c mozzarella cheese, shredded
3 c cheddar cheese, shredded
4 c sour cream
diced green onions, optional

Steps:

  • 1. Preheat oven to 350 degrees F.; grease the bottom and sides of a deep 9 x 13 baking dish.
  • 2. Cut baked potatoes into 1 inch cubes. Spread half of the cubed potatoes in the bottom of the prepared baking dish.
  • 3. Sprinkle the potatoes with half of the salt, pepper, onions if using and bacon.
  • 4. Add half of the sour cream on top and carefully spread out evenly. Sprinkle half of the cheeses over the sour cream.
  • 5. Repeat all of the layers. As you notice, this is a very full casserole. Make sure you use a deep casserole dish.
  • 6. Place in the preheated oven and bake, uncovered, for 30 to 45 minutes or until the cheese is melted and nicely browned.
  • 7. Enjoy!
