LEMON BASMATI RICE image

After trying basmati rice several years ago I almost don't want to go back to plain rice. There is nothing like the flavor and aroma of basmati. Recipe & photo: allrecipes.com 04-17-2016

2 tsp canola oil
1 c basmati rice, rinsed
1 Tbsp minced fresh ginger
1 tsp finely grated lemon zest, plus additional for garnish
1-1/2 Tbsp fresh lemon juice
2 c low-sodium chicken broth
1/4 tsp salt
1/4 tsp black pepper

Steps:

  • 1. In a 2-1/2-qt. saucepan over medium heat, heat the oil until shimmering. Cook rice, ginger, and zest, stirring, until fragrant, about 1 minute.
  • 2. Stir in lemon juice, broth, salt and pepper, and bring to a boil. Reduce heat to low and simmer, covered, until liquid is absorbed, 18 to 20 minutes.
  • 3. Let stand, covered, off heat for 5 minutes. Fluff with a fork and garnish with additional zest.
  • 4. For a little kick, add a clove of minced garlic. May also substitute ground ginger for fresh.
