Turkey Pita Sandwiches with Hummus and Guacamole image

You won't miss the mayo or cheese with this tasty recipe! Tahini in hummus seems to be one of those love-it or hate-it things. It can be omitted if you don't like tahini, but I don't think the hummus tastes as good without it. The cayenne can also be omitted if you don't like the spiciness. Since there's no dairy and no mayo in this sandwich, you don't have to worry as much about refrigerating it immediately (though there probably won't be any leftovers!) So good and so filling. An excellent way to get more protein in your diet.

1 pound(s) deli-style turkey
4 - pita pockets, cut in half
FOR HUMMUS:
1 can(s) garbanzos, with 1/4 cup juice reserved
2 clove(s) garlic
1/4 cup(s) tahini
1 tablespoon(s) olive oil, extra virgin
1 tablespoon(s) lemon juice
1 teaspoon(s) salt (to taste)
1 1/8 teaspoon(s) cayenne pepper
FOR GUACAMOLE:
1 - avocado, ripe
3 tablespoon(s) lime juice
1 teaspoon(s) salt (to taste)

Steps:

  • Add hummus ingredients to food processor and process until smooth.
  • Cut through peel and flesh of avocado until you hit the pit, working your way around with knife until avocado is in two slices joined by the pit in the center. Grasp the two halves with your hands and gently twist until the halves come apart. Scoop out the pit with a spoon. Scoop the avocado into a bowl. Mash with a fork until it has reached desired consistency. Stir in salt and lime juice.
  • Gently open the pita pocket halves. Spread avocado on one side and hummus on the other. Fill with 2-3 slices turkey. Serve immediately. Serves 4 (or 2 very hungry people!)
