TUNA CROQUETTES image

7oz pouch albacore tuna, drained and shredded
2 large eggs, beaten
1/4c panko
1t freshly squeezed lemon juice
2t dijon mustard
1/2t kosher salt
2 green onions, finely chopped
1/4t freshly ground black pepper
Additional 1/2c panko

Steps:

  • Combine first 8 ingredients (through pepper) in a bowl by folding gently with a spatula. Using a 1oz (2T) cookie dough scoop, place balls of mixture on a sheet pan lined with parchment paper. (don't pack it down; makes approx 8 croquettes) Let them sit and rest for 15 mins for panko to absorb moisture. Place additional 1/2c panko in a shallow pie plate or dish, and lay a croquette into the dish. gently sprinkle crumbs over the croquette and press into the top and sides, pressing to flatten them slightly. In a 12-inch skillet, warm enough olive oil to coat the bottom of the pan (about 1T) over med heat. Using a thin spatula, place croquettes in pan, leaving some space in between them. Cook approx 3 mins, until underside is golden brown. Flip over and cook for another 3 mins. Serve with lemon and tartar sauce.
