From my Middle School. We made them with apple in school and at home I made them with a banana instead.

Steps:
- Preheat oven to 400 degrees F.
- Line or grease a 12 muffin tin.
- In a medium size bowl, beat the egg with a fork and add the milk, oil and either the banana or apple.
- In a large bowl, blend the dry ingredients together.
- Make a well in the center of the dry ingredients then add the wet ingredients into the well and stir with a fork until just moistened-DO NOT OVERMIX.
- Fill the prepared muffin cups 2/3 fill and bake for 15-20 minutes, until golden brown.
- Cool on a rack before eating.
