My 2-yr old has always disliked oatmeal, so I thought I'd try a baked version - and he's eating it up today! He also has had an issue with gaining weight so I've fatted this version up - you can always use a lower fat milk, and even leave the oil out. Also, you could use 2 mashed bananas for the 1/2 cup of applesauce. I cut these into 8 strips and then wrap each one separately and put in fridge or freezer. They defrost easily in the microwave. You can also double the recipe and put in 8x8 pan.

- Preheat oven to 350°F.
- Beat egg with milk.
- Stir in oil, applesauce, vanilla.
- Mix in oats, brown sugar and cinnamon.
- Pour into greased 5x9 loaf pan.
- Bake in 350 F oven for 30 minutes.
