Bacon, White Truffle, Mac and Cheese image

Simple lifestyles recipe and Simply Eats have inspired this easy recipe. The earthy flavor of the white truffle oil gives this mac and cheese with bacon an extra snap of flavor for your early brunch or dinner.

1 3/4 c milk
2 Tbsp dehydrated onion bits
1 medium bay leaf
12 oz pasta, uncooked
2 Tbsp all purpose flour
1/2 c milk
1 tsp salt
3/4 c shredded fontina cheese
1/2 c shredded gruyère cheese
1/3 c real bacon bits or 6 strips precooked bacon,chopped
3 tsp white truffle oil (trader joe's)or (whole foods)
3 or 4 slice french bread, torn into pieces - it doesn't have to be fresh
2 Tbsp grated fresh parmesan cheese
2 clove garlic,crushed
1 Tbsp olive oil

Steps:

  • 1. Heat milk, onion and bay leaf in a large skillet until bubbles form around edges -do not boil. Cover and remove from heat; let set for 15 minutes. Cook pasta to al dente in boiling water; drain.
  • 2. Remove bay leaf from milk mixture. In a small bowl add remaining milk and flour, stirring with a whisk until well blended. Gradually stir flour mixture and salt into the warm milk and onion mixture. Stir constantly, cooking for one minute. Remove from heat, let set 8 minutes.
  • 3. Gradually add the fontina and Gruyère cheese, stirring until melted. Stir in pasta,bacon and truffle oil. Spoon mixture into a 2 quart,sprayed casserole baking dish. Preheat broiler .
  • 4. Place the bread pieces, Parmesan cheese and garlic in a food processor and process until coarse crumbs form. Drizzle with olive oil; pulse until fine crumbs form. Sprinkle breadcrumb mixture over pasta. Broil 2 minutes or until golden brown.
