Spinach Mango Smoothie image

My kids and I have this for breakfast often. We call it our "green drink" and they get so excited when I make it! It's the only way they'll eat spinach. This is a silky smooth, very healthy, energizing drink! (You've got to be a little adventurous though; some people just can't get past the idea of a smoothie being green!)

1 cup fresh baby spinach leaves, washed
1 ripe mango
1/4-1/2 cup orange juice

Steps:

  • Peel and slice mango. Combine with spinach and orange juice in VitaMix blender on high for 1 minute. Enjoy your "green drink!".
  • NOTES: For a thick smoothie, use 1/4 cup orange juice. To thin, just add a little more to get the consistency you like. Also, you do need to use a ripe mango. A not-quite-ripe firm one will not yield a very smooth smoothie!
