TOASTED ORZO PILAF image

Yield 2 servings

Number Of Ingredients 8

1 teaspoon olive oil
1/2 cup orzo
1 scallion, thinly sliced, white and light green parts only
1 clove garlic, minced
1 cup chicken or vegetable broth
salt and pepper to taste
1/2 can diced tomatoes, drained
3 cups of spinach

Steps:

  • In a large skillet, heat oil on medium high. Add orzo, scallions, and garlic. Cook, stirring occasionally, until orzo is golden brown, about 4 minutes. Add diced tomatoes and cook 1-2 minutes. Add broth and salt and pepper. Cover, lower heat, and simmer until broth is absorbed and orzo is tender, about 15 minutes. Add spinach and cook until just wilted. Nutritional Information per serving: 260 calories, 4 g fat (1 g saturated), 40 mg sodium, 46 g carbohydrates, 2 g fiber, 11 g protein
