Thanksgiving Leftover Shepherd's Pie image

Need to use up those leftovers from Thanksgiving? Check out this shepherd's pie made with leftover turkey, vegetables, and mashed potatoes. You can layer in cranberry sauce and stuffing, if desired.

2 ½ cups leftover shredded turkey, or more to taste
½ cup barbecue sauce, or more to taste
1 pound leftover cooked vegetables
3 ½ cups mashed potatoes, or more to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a rectangular baking dish.
  • Cover the bottom of the dish with shredded turkey. Pour barbecue sauce over the turkey and stir with a fork or spoon to combine. Layer leftover vegetables over the turkey and spread mashed potatoes on top. Sprinkle with shredded cheese.
  • Bake in the preheated oven until top is lightly browned and cheese is melted, 25 to 30 minutes.
