Tex-Mex Corn on the Cob image

A recipe I found on Taste of Home website that I changed to suite my tastes. Posting for our Culinary Quest event for the Tex-Mex portion.

Number Of Ingredients 8

6 ears of corn on the cob
3 Tbsp minced fresh cilantro
1 1/2 tsp chili powder
1 1/2 tsp grated lime peel
3/4 tsp salt
3/4 tsp ground cumin
1/4 tsp garlic powder
6 Tbsp butter

Steps:

  • 1. Place corn in a Dutch oven or kettle; cover with water. Bring to a boil. Reduce heat; cover and cook for 3-5 minutes or until tender. Or use your favorite method to cook the corn.
  • 2. Meanwhile, in a small bowl, combine the cilantro, chili powder, lime peel, salt, cumin, garlic powder and butter. Drain the corn. Spread some of the butter mixture over each ear of hot corn and enjoy!!
