SHRIMP, SPINACH AND CHEESE STUFFED MUSHROOMS image

Yield 18 Mushrooms

Number Of Ingredients 7

2 tablespoons Vegetable Oil
3 tablespoons chopped Garlic
1 pound Shrimp, finely chopped
2 pounds Spinach, chopped
2 cups Gruyere Cheese, shredded
1 Lemon, juiced
1 pound Mushrooms, stemmed

Steps:

  • Preheat oven to 350* Heat Vegetable Oil in large sauted pan over low heat. Add Garlic and saute until fragrant but not browned. Add Shrimp, Spinach, Cheese and Lemon Juice. Fold the mixture over and cook until Spinach cooks down evenly and Cheese is melted. Stuff Mushroom Caps with mixture. Place on baking sheet and bake for 13 minutes.
