Number Of Ingredients 7

4 large flour tortillas; 1 pound deveined
shelled and washed medium shrimp; 1/2 pound each bay scallops and firm white fish (like talapia); about 1 cup chopped cilantro (half a bunch); 2 cloves garlic
crushed; 1/4 cup chopped yellow onion; juice of 3 limes (about 3/4 cup); 1/8 cup olive oil; 1/4 pound shredded queso anejo (or sharp cheddar)
1/4 pound queso enchilado (or a salty
dry goat cheese)
and 1/4 pound queso Oaxacano (or mozerella)
1 tbl red pepper flakes.

Steps:

  • Warm tortillas, covered. In a medium bowl marinade for 1-3 hours the shrimp, scallops and fish (with liquids) with lime juice, half of the olive oil, garlic, onion, cilantro and red pepper flakes. With large skillet over medium heat add remaining olive oil. Add marinating ingredients to skillet; cook until done, 3-4 minutes. Add shredded cheeses. Dish into warm tortillas and serve.
